Harvest Time Apple Streusel Swirl Bread (Vegan)

    February 24, 2015

Are you in the mood for some warm, yeasty bread, sweet apples, cinnamon spice, and plenty of crumbly streusel! I don’t think there will ever be any question whether or not this is one of the best flavor combinations known to man. Ah, it’s so good! By now you’re probably starting to catch on to the fact that I like to recreate my family’s favorite foods. Things that we don’t have access to in Chile. I enjoy the challenge. This is one of my recent attempts to copy a classic. One of my sisters used to have this slight obsession with apple bread and she’s been missing it a…

Creamy Corn Chowder + Rye Bread Bowls (Vegan)

    September 18, 2014

So have you had an awesome Summer? Well, my summer has been pretty great so far and I’m really excited to see what comes next. Okay, about the recipe. I have been wanting to make bread bowls for what seems like such a long time! I mean, who doesn’t love getting to eat the bowl when the soup is gone? Plus, it looks so pretty and rustic when you serve it. And I don’t know about you, but I have always loved corn chowder. I think I should mention that my soup was not quite as corny and thick as it looks in the pictures. That is due to me…

  • The 12 day countdown is here! My goodness is the season flying by. At least the season has been everything I love this year. Our snow arrived just on time to ensure we'll at least have some white on Christmas day. Also, I've been listening to Christmas playlists on repeat. Oh, and I've been loving the local lights and decor. The CDA resort puts up a stunning display every year that draws people from all over and the surrounding businesses are getting all festive as well. I've been down to the resort twice already. 😍✨ Over the next week and a half the streets and stores will be filled with last-minute shoppers trying to finish their lists. If you're anything like me you at least have a bunch of wrapping to finish (I definitely do right now). Anyway, I just wanted to say that I hope you're having an amazing season. Don't forget to enjoy as many moments of it as you can and step back from all the chaos to just be with friends and family.

  • The decade is almost over guys!

I know everyone’s posting retrospective photos, talking about goals for the next decade, and basically just wondering how it passed so quickly. Me? I’m honestly not too concerned about it. I mean, it’s exciting to be starting a new global chapter for sure. I guess I’m just not so into focusing on new year’s (or in this case new decade’s) resolutions as if that’s the only time to make big life decisions. I sort of prefer to make them on a daily basis.

Besides, I’ve never been the greatest at sticking to arbitrary resolutions set out of obligation. I think if something matters to you you’ll stick with it and go for it regardless of how long it takes you to get there or if it’s written on some list. Life has a way of happening how it wants to anyway, so planning it so intently is kind of pointless.

I'm just so excited we've finally got some snow on the ground. It's a winter wonderland outside. ❄️😍🌨️
  • So there’s a time and a place for all things pumpkin this time of year, but if I’m being honest I prefer using sweet potatoes in baking and cooking. It’s a little but sweeter, it’s much easier to prepare from scratch, and it adds amazing texture to your baked goods.

I had a bunch of leftover sweet potatoes after Thanksgiving was over this year so, me being me, that meant baking time. If you’ve never tried a sweet potato bread before, honey, you are missing out. I love adding pecans as well but it you prefer to keep it simple they’re optional. The brown sugar glaze is a must though. It’s not you’re typical icing but it’s simple and it compliments this bread really well.

  • So it's almost mid-December my friends, holy jingle bells, how did that happen?!?! If you haven't gotten into the kitchen to make something festive yet, what are you doing with your life? I mean, it's Christmas cookie crunch-time, people!!! I love making the traditional simple things like sugar cookies and fudge, but I also like to make some fancier things too. Obviously gingerbread houses are a must and then these homemade caramels are something I like to make during the season as well. They're require a little more patience but they're a crowd favorite and make a perfect handmade gift.

  • Comfort food time! So when I was growing up my family's Christmas Eve tradition was always to get together with grandparents and cousins and have chili for dinner. It sort of changed at some point as me and my siblings got older which is really sad. However, I still find myself thinking of chili as a perfect holiday season meal.
My favorite variation of chili is one my mom used to make with a little bit of Mexican flair. I sort of switched things up from her recipe (sorry mom but I left out the chicken 😜). It's amazing with some homemade cornbread and lots of cilantro of course.

  • Okay, so I haven't even started my Christmas shopping and the countdown to Christmas is ticking away. Yikes! Please tell me I'm not the only busy person that isn't on top of things this season.

When it comes down to those really difficult to buy for people, I sometimes prefer to make gifts myself. Even if a store-bought gift might be more convenient and cheaper, a handmade creation is always going to have way more gift value. Besides, when you take the time to make gifts you have the ability to tailor them specifically to the friends and loved ones in your life.

Anyway, these hot cocoa mixes are not really a new idea, they've been done a billion times. I was just hoping these flavor combinations might inspire you to think outside the box and create even more unique cocoa mixes. These are thoughtful, fairly inexpensive, and not to mention super aesthetic!

  • For some reason I find it so much less fun to post savory things during the month of December. Oh yeah, that's because all I want to do is share Christmas cookies! Of course that's not very practical so here's something savory.

So traditional Mexican tacos are always delicious, but if you're ever in the mood for some fusion these Asian inspired tacos are a fun way to change things up!

  • When it's the Christmas season and you're feeling real extra.... ❄️🍫🎄 Most of the time guys, I eat such basic meals. On the other hand, sometimes I like to be a little rebellious and mix a bunch of stuff together that might weird people out. 😝 Look, I'm not going to try to explain my strangeness when there's people paying good money to eat snails in France, bugs in Asia, and goodness knows what else. Relatively speaking I think this is pretty tame. 😂
In the bowl -> @naturespathorganic pumpkin waffle, @oatyeahoats yogurt, mixed berries, peanut butter, chocolate, cacoa nibs, pumpkin seeds, and a few bits of a @larabar. Told ya I was feeling extra.😉
