Maple Leaf Cream Filled Sandwich Cookies

    October 8, 2018

The leaves have gone from just barely hinting at color to covering the ground in nature’s confetti. Of course, Fall wouldn’t be complete without baking some treats and cookies are always a crowd favorite. So who else loves those Maple leaf cookies from Trader Joe’s? If you’ve never been to TJ’s then you may not know what I’m talking about. These cookies are a classic and have always been a favorite of my mom’s. Now, they’re not exactly health food, obviously, but balance is a good practice and this time of year just needs occasional treats. Besides, a sweet cookie to go with a warm mug of afternoon tea or…

Oaty Pumpkin Pancakes + Maple Nut Butter Spread

    October 6, 2018

I’ve been really loving oats lately. During the Summer I felt like I could eat allllllll the fruit but the moment the weather shifted all I’ve wanted are warm foods. Now plain old oats can seem really boring to some people, and that’s okay. However, if you want to get the best of both worlds by eating your healthy oats and doing it in a way you love, make oatmeal pancakes! OOoooh, and add pumpkin and spice and everything nice! (Did I take that too far? yeah probably.) Not only do these have all the benefits of whole grains but they’ve also got some sneaky fruits and veggies from the…

Cinnamon Apple Graham Cracker Crumb Bars

    October 1, 2018

And it appears the weekend’s over, so um………I think we need something sweet to “celebrate”, right? HEY, how do you feel about apples and cinnamon stuffed inside cookie bars???? But for reals, what do you think? I have all types in my gang when it comes to apple desserts; the ones that like anything and everything, the ones that only like cooked apples but hate cinnamon, the ones that claim to be allergic to all fruits, those that only like raw apples, and those that refuse to have an opinion at all. With so many people living here in casa craziness it’s becoming easier and easier to get rid of…

Soft Pumpkin Spice Chocolate Chip Cookies

    September 30, 2018

I’m feeling it, you’re thinking what I’m thinking aren’t you? That this Monday is in serious need of chocolate!   So have I told you guys how persistent I am? I mean as a person in general, but I’m especially stubborn when it comes to creating new recipes. I don’t know why but I can’t help it. When I get an idea in my head that I really want to try it’s like I have to make it work or I can’t move on. I guess I can even take this character trait a little bit far sometimes, but hey, can you blame me when there cookie perfection is on the…

Healthy Pumpkin Pie Spiced Hummus with Cinnamon Graham Crackers

    September 27, 2018

So it’s finally starting to feel consistently like Fall which officially means it’s time for #pumpkinspiceeverything. If you think I’m exaggerating, just wait until the end of October. Haha, my brother-in-law has been loving to make fun of me, my sister, and any other American girl that enjoys pumpkin. As he says we’re “basic white girls” and apparently that applies to all my fellow Autumn fanatics. Hey, I’m not ashamed to own it because I do love it! I mean, have you seen all the pumpkin flavored things at the store????? How can that not be fun and exciting? I’m hoping to take my little sister and my nephew to…

Harvest Time Apple & Pumpkin Chili

    September 25, 2018

Please tell me you’re week needs some delicious comfort right about now because, if so, this is exactly what you need! How do you feel about chili? To me it always seems like chili is one of those meals that doesn’t get appreciated enough. I don’t get it, it’s so homey and chock full of flavors, oh, and you can load it with so many good things like guacamole and eat it with cornbread, YUM!. Plus, it’s versatile and you can do so many things with it (Hello chili-cheese fries!), what’s not to love? I have to tell you, even within my own family chili isn’t the most popular. I…

    Glazed Cinnamon Apple Fritters (V+GF)

    September 22, 2018

Have you ever tried to imagine the world without doughnuts? I’ll tell ya, it’s a very lonely and depressing reality. On the other hand, when there is cinnamon and apples involved in said doughnuts it’s pretty much heaven on earth. Me and apples are kind of having a moment right now. Yep, I live in an area that happens to grow my favorite apples on the planet, pink ladies! Yay-yuh! It’s kind of ironic too, because we often buy Chilean apples from Costco here in the States, and I never would have imagined that I’d have lived there for over 4 years. Actually, a funny story that gets repeated in…

Breakfast never looked so appealing! These pretty parfait jars have layers of creamy, fruity, and super healthy goodness! Prep Time 20 minutes -Ingredients-
*Chia Pudding:*
1/3 chia seeds
2 cups non-dairy milk I use almond milk
1 cup Greek style coconut yogurt or any non-dairy yogurt
1 teaspoon vanilla extract
2 tablespoons maple syrup or other liquid sweetener
*Goji Berry+Banana Smoothie:*
1 cup frozen mixed berries
2 medium bananas peeled and frozen
1/4 cup goji berries soaked for at least 2 hours in 1/4 cup water
1/4 cup chia pudding recipe above
*Optional Add-Ins:*
1 medium banana sliced
1/2 cup mixed berres
goji berries
vegan cookie dough balls I used this recipe for cookie dough protein bars, but rolled it into tiny balls and used mini vegan chocolate chips instead of chunks.
cocoa nibs
granola -Instructions-
*Chia Pudding:*
Stir together the ingredients for the chia pudding in a small bowl or container and allow it to thicken in the fridge for at least 5 hours.
*Goji Berry+Banana Smoothie:*
Add the soaked goji berries (and the water they soaked in) to a blender or food processor along with the lemon juice, 1/4 cup of the prepared chia pudding, and the maple syrup. Blend until smooth then add the frozen berries and banana. Blend until you have a very thick icecream-like mixture.
*Jars:*
Layer the chia pudding with the smoothie and desired add-ins in jars or bowls. (I like to layer all the goji berries and sometimes granola or cocoa nibs throughout so you can get the crunch.)
