Are you guys getting the most out of pumpkin season yet? Because if not I could make a few suggestions. Starting with, that’s right, Whoopie pies!
I’m not sure it could get better than these. I mean, whoopie pies are basically portable and way less messy pieces of cake with frosting in the middle. Like muffin top sandwiches. The cookies are soft and the filling is so sweet and creamy. Oh, and these are filled with a Kahlúa buttercream, what! It wasn’t until recently that I discovered Kahlúa and all it’s amazingness. The first time I tried it I had one of those life moments where you’re torn between happiness in your new discovery and regret that you’ve been missing out on it all your life. Tough stuff.
If you haven’t ever had it then you need to get right on fixing that. By the way, since we’re on the subject of things never tried, I have never made a hot drink for my blog. What is wrong with me? Where are the mugs of cocoa and the buckets of cider, I’m wasting my life over here! Clearly this problem needs solved asap.
But anyway, pumpkin season is the best isn’t it? Not just for the sake of pumpkins, but also for all that they represent. They are like a symbol for the beginning of my favorite months of the year. Okay, and I know I don’t actually have pumpkins here in Chile but they still remind me of that and it would be pretty hard to forget all the memories and excitement they bring back from having grown up in the States.
So this is a recipe that I have tried a few different versions of to find that perfect whoopie texture that makes the perfect pie and I kept coming back to my original favorite. Sometimes you have to follow the motto ‘if it ain’t broke, don’t fix it’. I’m talking to myself here because I think it’s pretty obvious I have a glitch about changing everything into something new and I should just chill out sometimes. “Sometimes”, being the key word here because we all know I’m not going to stop tweaking anytime soon. That’s okay with you right? Fusing recipes and switching up the classics is just way more fun to me.
K, I think I’ve said all I can about these so called pies that are, in actuality, more like giant pumpkin spice oreo cookiess on steroids!
