Veggie Grain Bowls with Crispy “Parm” Roasted Chickpeas & Aji Ranch

    February 14, 2019

Anyone else craving some wholesome goodness? I’ve been so inspired recently by all of the pretty and healthy bowls that everyone has been making. All of the modern, hip food bloggers are doing them. There are a bunch of different names for them; buddha bowls, nourish bowls, quinoa bowls, there’s even the smoothie bowls going on. Basically, everything is in bowls and if it’s not then you aren’t doing it right. My main goal for this recipe was to keep things really simple and I even took some optional short-cuts/cheats for my own bowls. The first step is to make the “parm” chickpeas which are way easier to make than…

    Homemade Almond Milk + Video

    February 6, 2019

I think it’s pretty safe to say there are a lot of options for plant-based milks on the market today. You’ve got oat milk, cashew milk, rice, soy, pistachio, hazelnut, hemp, and the list goes on and on……… So, why then, would you want to go to the effort of making your own? I mean, if you haven’t seen all the hilarious memes of desperate people spending all their time “milking” almonds every morning then what are you doing with your life? (Google it if you want a laugh 😉 ) But anyway, there are actually tons of reasons that you might want to make your own. Firstly, the taste…

    Healthier Oatmeal Cream Pies (Vegan+GF)

    January 14, 2019

So were you a fan of Little Debbie’s famous cream pies as a kid? I liked them but I could never figure out how I really felt about them because they were obviously not healthy at all. On the other hand though, you sort of felt like they should be because they were oatmeal, you know? That’s pretty much what this recipe is doing. I mean, they could be a lot worse but I’ll be honest and admit they’re not exactly the “healthiest” choice. They’re just a healthier alternative. I just figured that if I was going to share a fresh treat this January it should at least pretend to…

Simple Sweet Potato Veggie Burgers (Vegan+GF)

    October 10, 2018

There are nights when you crave a cozy soup……and then there are times when you just need a burger! I’ve really been into simplifying things recently. I mean, life is complicated enough without adding to it, you know? These veggie burgers definitely fit the bill because they’re about as basic as it gets. They’re great for making ahead for the week as well. I remember the first time I heard of a veggie burger as a kid and the first thing I thought of was a regular burger piled with vegetables. When I found out that you could make burgers out of things like squash, beans, and other vegetables I…

Oaty Pumpkin Pancakes + Maple Nut Butter Spread

    October 6, 2018

I’ve been really loving oats lately. During the Summer I felt like I could eat allllllll the fruit but the moment the weather shifted all I’ve wanted are warm foods. Now plain old oats can seem really boring to some people, and that’s okay. However, if you want to get the best of both worlds by eating your healthy oats and doing it in a way you love, make oatmeal pancakes! OOoooh, and add pumpkin and spice and everything nice! (Did I take that too far? yeah probably.) Not only do these have all the benefits of whole grains but they’ve also got some sneaky fruits and veggies from the…

Harvest Time Apple & Pumpkin Chili

    September 25, 2018

Please tell me you’re week needs some delicious comfort right about now because, if so, this is exactly what you need! How do you feel about chili? To me it always seems like chili is one of those meals that doesn’t get appreciated enough. I don’t get it, it’s so homey and chock full of flavors, oh, and you can load it with so many good things like guacamole and eat it with cornbread, YUM!. Plus, it’s versatile and you can do so many things with it (Hello chili-cheese fries!), what’s not to love? I have to tell you, even within my own family chili isn’t the most popular. I…

    Autumn Squash Soft Pretzels

    September 19, 2018

It’s getting so close to being officially Autumn and I’m so psyched! I won’t even bother starting on how much I love this time of year because I’m afraid it’s all I’ve been talking about lately. However, I will give fair warning that I’m almost certainly going to be getting a little excited about the theme in my coming recipes. So with these pretzels, I was thinking back to a recipe for dinner rolls that I made using pumpkin. It’s a similar idea, but let’s be honest, pretzels are way more fun. I had some different squashes that I wanted to try and both of them turned out well. One…

*Goji Berry+Banana Smoothie:*
1 cup frozen mixed berries
2 medium bananas peeled and frozen
1/4 cup goji berries soaked for at least 2 hours in 1/4 cup water
1/4 cup chia pudding recipe above
*Optional Add-Ins:*
1 medium banana sliced
1/2 cup mixed berres

vegan cookie dough balls I used this recipe for cookie dough protein bars, but rolled it into tiny balls and used mini vegan chocolate chips instead of chunks.
cocoa nibs

*Chia Pudding:*
Stir together the ingredients for the chia pudding in a small bowl or container and allow it to thicken in the fridge for at least 5 hours.
*Goji Berry+Banana Smoothie:*
Add the soaked goji berries (and the water they soaked in) to a blender or food processor along with the lemon juice, 1/4 cup of the prepared chia pudding, and the maple syrup. Blend until smooth then add the frozen berries and banana. Blend until you have a very thick icecream-like mixture.
*Jars:*
Layer the chia pudding with the smoothie and desired add-ins in jars or bowls. (I like to layer all the goji berries and sometimes granola or cocoa nibs throughout so you can get the crunch.)
