Asian Kale Watermelon Salad + Sesame Peanut Dressing (Vegan+GF)
This wildly unique combination is such a great Summer dish. Serve it as a side or throw in some beans and tempeh to make a delicious lunch. Serve as soon as possible.

Ingredients
Sesame Peanut Suace:
1/4cupnatural peanut butter
1/4cuptamari or soy sauce
1teaspoonfreshly grated ginger
1teaspoonminced garlic
1tablespoonchili garlic paste
1tablespoonmaple syrup
3tablespoonsrice vinegar
1teaspoonsesame oiloptional
Salad:
2cupsfresh watermelonin small cubes
3-4mandarinspeeled and separated
3cupsfresh kalestems removed and finely chopped
1cuppurple cabbagefinely chopped
1large carrotthinly sliced
1cupred radishesthinly sliced
1large zucchinispiralized
1tablespoonblack sesame seeds
1tablespoonsesame seeds
Instructions
Stir together the ingredients for the sauce in a medium mixing bowl until smooth.
Add all the fresh fruits and veggies to the bowl and toss to coat completely.
