Chocolate Spelt Waffles + Maple Nut Butter Syrup (Vegan)

Ingredients
1cupall purpose flour
2cupsspelt flour
2/3cuporganic raw cane sugaror regular sugar
4cupsunsweetened plant-based milk
1cupunsweetened plant-based yogurt
1/4tablespoonsmixed nut butterany nut butter can be substituted
1/3cupcocoa powder
1teaspoonvanilla extractoptional
1teaspoonsalt
2tablespoonsbaking powder
non-stick cooking spray or oil for greasing the ironoptional
Maple Nut Butter Syrup:
1/2cupmixed nut butterany nut butter can be substituted
1/2cupmaple syrup
1teaspoonvanilla
Instructions
Combine flours, sugar, salt, and baking powder, in a large mixing bowl. In separate bowl, stir the nut butter with vanilla, milk, and yogurt until smooth. Pour into dry ingredients and stir until smooth.
Heat a waffle iron and spray lightly with cooking spray. Cook waffles according to manufacturer's instructions.
Maple Nut Butter Syrup:
In a small saucepan over low heat and gently stir in the syrup and vanilla. Pour, warm, over the finished waffles.
