Fudgy Peanut Butter Protein Brownies (Vegan)
One of the absolute best questions to ask someone who eats plant-based/vegan is where they get their protein. I’m being a little sarcastic here but I also have some pretty smartass answers to this question that are pretty fun to deliver on the right occasion. My favorite; “I get my protein the same place your protein gets its protein and skip the middle-man.” Hey, for the most part I avoid being the stereotypical preachy vegan and I actually understand all the questions because I had them myself. I love to be inspiration to people to try something new or healthier but I don’t ever like to preach (unless asked, because…

Un-fried Veggie Stir-Fry Rice (Vegan+GF)
Is it finally almost over, the craziness? This year has been anything but expected and I’m sure we’re all eager to return to whatever “normal” we left behind a few months ago. On the upside, I’ve definitely been able to spend more time on the blog than I could’ve imagined. I haven’t created so many recipes in a long time. I’ve actually been trying to look at this situation in the best, most positive light. I feel very fortunate to be in a position where I can work from home during all of this. Yes, I’ve missed socializing with friends and I’ll be very happy to get that back, but this time has…

Berry Orange Blended Oats (Vegan+GF)
I love it when I discover some new food idea that I’ve never heard of before. It’s especially great when it’s easy and/or healthy and I have all the ingredients to try it. This is one of those times. Okay, have you ever heard of blended oats? I came across the idea on pinterest recently and it was one of those mind-blown moments. I don’t know why I’ve never thought of it before. It’s not complicated at all. The texture is like a slightly grainy yogurt and the flavor is super versatile. For this recipe I added fresh berries and whole oranges but you could honestly use any type of fruit. Actually,…

Deep Dish Chocolate Chip Cookies (Vegan+GF)
So um, If I ever stop coming up with variations of a chocolate chip cookie you’ll know my body’s been inhabited by aliens or something. Hey, I can’t help it, there’re just so many ways you can recreate this classic treat. That, and I really just love taking photos of them. What can I say? They’re very aesthetic. Okay why would you do a deep dish cookie you might be wondering? Seriously though, is anyone actually wondering that? Hello melty pools of chocolate that can acceptably be eaten with a spoon, double the thick and chewy texture and gooey center, and then there’s always the option to throw some ice cream on top!…

Roasted Garlic & Mushroom Farfalle Pasta (Vegan)
This has got to be one of the best ways ever to do pasta! So let’s talk pasta! Please tell me that you have all had the chance to eat at The Cheesecake Factory at least once??? When I was a kid it was one of my family’s favorite restaurants. We don’t have one near us now so I haven’t been in years, but when we used to eat there my mom and I both loved this one dish they had. Their bowtie pasta with this yummy roasted garlic cream sauce that leaves you wanting to keep going back in for more even when you’re stuffed to your limit. It also doesn’t help…

Frosted Maple Pecan Bars (Vegan+GF)
It’s May already? How is it that when you’re waiting for something time seems to tick by so slowly, then you reach the date you’ve been waiting for and it seems to have flown by? Time is such a strange thing. Well, it’s finally here and I know for many places it’s sort of the threshold for slowly returning to “normal” life. So obviously these last many weeks have given us all some fresh perspective and given a chance to do things we wouldn’t usually do. Personally, I’ve been able to catch up on a million little blog tasks that I’ve been putting off. One of those was to finish posting all of…

Cheesy Broccoli “Cheddar” Pizza (Vegan+GF)
Happy whatever today is. Is this mess of a month over yet? Okay, well maybe some homemade pizza will help us get through. Ever since I’ve been plant-based I’ve discovered that there are a few standard questions to expect when talking about it with others. Numero uno; “Where do you get your protein?”. Second; “Don’t you miss cheese? I mean bacon tho!?!?”. Third; “Is your whole family vegan?” All of which send me into a fit of laughter, especially three. Let’s just say that I’m the only one in my family who eats this way and they all basically think I’m crazy even though I’m very happy about it. So I was informed…
