Soft Baked Gingerbread Cookies (Vegan)
Every holiday season needs gingerbread to be complete, can we agree? When I was a kid it was a family tradition to make gingerbread houses every year. We usually had a little friendly competition to see who’s house was the best. It was fun motivation for the little ones to not give up as soon as they got bored and also to not eat all their sweet decorations before the process was done. The downside of our tradition was always that we’d use those pre-assembled kits that tasted like drywall. They’re so convenient if you have kids and don’t want to spend hours baking and assembling, but for eating they are a no-go.…

Travel Diary: Oahu Hawaii
“The real voyage of discovery consists not in seeking new landscapes but in having new eyes.” -Marcel Proust _______________________________________________________________________________________ I can’t believe that I’d never visited Hawaii before this trip. It’s seriously one of the most beautiful places I’ve visited in my life. Unlike most of my trips I was fortunate to have a cousin that I was visiting so it made the trip all the better. She also happens to be a travel writer and an adventurous soul like me so we had an amazing time together. I didn’t have time to see any of the islands other than Oahu but I consider that my reason to go back as soon…

Travel Diary: Oahu Hawaii (Video)
If a picture is worth a thousand words than a video must be worth a million. Of course, this won’t even begin to cover the feelings and experiences of actually being there but it’s amazing that we even have the ability to share this much in the age we live in. There’s something really magical about the native culture of Hawaii. They have a reverence for things we can’t see or touch that I find so beautiful. The language itself speaks to this. On the islands “Aloha” doesn’t just mean hello and goodbye, it’s a way to express Love, Peace, and Compassion. To live with Aloha is to be putting out a spirit…

Simple Sweet Potato Veggie Burgers (Vegan+GF)
There are nights when you crave a cozy soup……and then there are times when you just need a burger! I’ve really been into simplifying things recently. I mean, life is complicated enough without adding to it, you know? These veggie burgers definitely fit the bill because they’re about as basic as it gets. They’re great for making ahead for the week as well. I remember the first time I heard of a veggie burger as a kid and the first thing I thought of was a regular burger piled with vegetables. When I found out that you could make burgers out of things like squash, beans, and other vegetables I was super intrigued…

Getting Excited About Autumn Photo Shoot
I know we usually all gather here for the food, but with yesterday being October 1st I really wanted to share some inspiration to get out and enjoy the natural beauty if you live in the Northern Hemisphere. Anyway, I went for a little walk a few days ago and came home with the most surprisingly beautiful shots that just make me so happy to look at. Tell me what your favorite things about Autumn are!

Montana Travels: Glacier National Park – Part 2
Hello again! I’m home again and now it’s time for me to share part 2 of this adventure. So I’ll definitely have to say this was the most exciting day of our trip because we ended up on the road called “Going To The Sun Road” and that was sort of on accident. Let me explain. When we got into the park on the first day I went into the information center to get recommendations for what we should see. I talked to a very nice older gentlemen who told me the route he’d take so we headed there to find some hiking trails. That’s when we started noticing the…

Thursday Things
Happy Thursday again. So the flu season this year has been ridiculousness. Anyone else? I’ve been trying to pretend I didn’t have this annoying cold all week, but to be honest it’s got me feeling pretty crappy today. Also, the temperature here is supposed to reach the 50s, that’s so crazy for February here. I know I keep mentioning the warm weather but it’s just so unusual. Also, my nephew is turning 3 tomorrow. Wow, how come no one ever tells you how old these things make you feel? I’m not sure I feel old enough to be an aunt “Doh-Dee” to a 3-year-old. Oh, and if you’re wondering about the waffle…
