Nutella Popcorn Ultimate Chick-Flick Snack Mix (Vegan)

All the single ladies, all the single ladies! All the single ladies, all the single ladies! now put your hands up!……………………if you want some of this munchy sweet snack mix!

Of course, it’s not only for the girls (trust me, the guys liked this too), but Valentine’s Day is nearly here and I know I’m not the only single lady in the room needing a distraction right about now. When all else fails…….we call upon the power of salt and chocolate. Ya know what I’m sayin’ ladies?

Maybe not, maybe you’re fortunate enough to be spending the day with the love of your life, or at least someone you’re hoping will become that. I’ll try to look at this day with a more objective perspective. Whatever the case, this will still be a perfect thing for making  your day complete.

Remember when I made those mallows last week and told you I’d probably be using them in a recipe soon? Well, here they are making a guest star appearance in this fun and easy snack mix, and it really is so super easy that’s it’s almost embarrassing you guys. But that’s what snack time is all about right, quick and easy? If you’re feeling like this should be that much easier and you don’t feel like making your own marshmallows, that’s cool. You can just buy some plain or, this time of year, you can probably buy heart shaped ones at the store.

Okay, and this is totally random, but I think I forgot to mention that we finally gave are kitties names a few weeks ago. The gray one is Nala and the Black one is Kiara (Yes, like the Lion King) and they have been cracking me up. The night before last they managed to climb onto the roof and come to my window (my room is on the second floor) to freak me out by smacking at the moths that were trying to get in. Then yesterday afternoon when I had my window open, I looked up from something I was reading to find them lounging comfortably on my bed.

We kind of have a no-animals-in-the-house rule so they know by now that they aren’t supposed to come in……but they’re so darn cute guys that I let them hang out for a few minutes and it was a bad idea. Now I’m going to have to be a meany or just keep the window shut. Option two is not a possibility most days because it’s been really hot so I guess that leaves me having to kick them out. Hopefully they’ll forget that they like hanging out in there. They really are adorable though, I will have to take some pictures to share soon.

And speaking of pictures that need sharing, I’ll be posting some of Ryder’s birthday cake from the other day on Sunday so you have to check back. Okay, so now that you have the perfect snack planned you need to go and line up some great flicks to go with. I think this mix should become a new v-day tradition!

Nutella Popcorn Ultimate Chick-Flick Snack Mix

Try something new for your next movie night or snack attack. This sweet, salty, and delicious mix will have the friends begging to come over.

Prep Time 30 minutes
Servings 8 servings (ish)

Nutella Popcorn:

  • 8 cups freshly popped salted popcorn
  • 1/3 cup chocolate hazelnut butter *see note
  • 2 tablespoons coconut oil melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/3 cup powdered sugar
  • 1 tablespoons cocoa powder

White Chocolate Pretzels:

  • 3 cups snack pretzels
  • 1 tablespoon coconut oil
  • 2/3 cups dairy free white chocolate
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/3 cup powdered sugar
  • 3 cups gelatin free vaniila mini marshmallows

Nutella Popcorn:

  1. Pour the popcorn into a large bowl with plenty of room for stirring. (You can use your preferred method of popping such as air-popped. I prefer stovetop method.) Melt the nutella and coconut oil in a small saucepan over medium low heat. Remove from heat and stir in vanilla and salt then pour over popcorn. Use a large rubber spatula to gently fold it over and into the popcorn until evenly coated.
  2. Mix the cocoa and powdered sugar in a small seperate dish and sprinkle over popcorn. Toss gently to cover all peices, then spread corn on a parchment lined tray to dry for at least 30 minutes.

White Chocolate Pretzels:

  1. Melt the white chocolate and coconut oil in a small saucepan over medium low heat. Remove from heat and stir in vanilla and salt then pour over pretzels in a medium bowl. Gently toss to coat all the pretzels evenly then sprinkle powdered sugar over them and spread out on tray another parchment lined tray to dry.
  2. Once dry, pour the popcorn back into the large bowl and add pretzels and marshmallows. Toss together and enjoy munching it with friends while watching a favorite movie!
  3. This mix is best eaten fresh, but it should last in an airtight container for up to a week. If you plan to save this for a later time it's best to store each part seperately and mix right before eating. Otherwise the popcorn absorbs the small amount of liquid in the mallows and you get soggy pretzels, tough popcorn, and hard mallows

Recipe Notes

If you live in a humid climate (like me) then the nutella popcorn will be best made as close to eating as possible. However, if it has to be made ahead, or you have some leftover, and the texture gets tough I've found that toasting it at 350 for about 5 minutes can totally save it's life. Just watch closely not to burn it. You can make homemade nutella or use a brand of chocolate hazelnut butter that doesn't have dairy. (Btw, Nutella brand does)
