Creamy White Bean Chili (Vegan+GF)
Is it just me, or is chili just one of the ultimate go-tos for comfort food? Personally, I can enjoy a classic, smoky, firehouse-style, tomato-based chili from time to time. Although, I prefer it on the mild side because I’m a spice wimp. However, when it comes to my preference I think a creamy white bean chili with a more Mexican flair is my favorite. It also wins votes in my house because pretty much my whole family agrees with me. Tell me, what’s your preference? Roasted Cauliflower & Broccoli “Cheddar” Soup (Vegan+GF)
Nothing says warm and home like a big steaming bowl of soup. Start with a simple vegetable stock base, include some roasted veggies and fresh herbs, and then add something creamy and you’ve got yourself a great thing going. Okay, now that I’ve gone and totally sounded like a soup commercial. Ugh, I know, I do that a lot don’t I? Someday I will hopefully be better at this whole writing thing. My parents and older siblings have always liked chili, but my younger siblings have not liked it up until recently. So as result, I did not make it that often. But now, it’s a household favorite so I am always trying to put a little spin or tweak to it here and there. I love adding lentils to chili because they hide really well. We also like to serve it with cornbread. I have shared a few versions of cornbread but THIS ONE is…

Creamy Corn Chowder + Rye Bread Bowls (Vegan)
So have you had an awesome Summer? Well, my summer has been pretty great so far and I’m really excited to see what comes next. Okay, about the recipe. I have been wanting to make bread bowls for what seems like such a long time! I mean, who doesn’t love getting to eat the bowl when the soup is gone? Plus, it looks so pretty and rustic when you serve it. And I don’t know about you, but I have always loved corn chowder. I think I should mention that my soup was not quite as corny and thick as it looks in the pictures. That is due to me spending too long…
