Add the figs, dates, water, and lemon juice to a medium to large saucepan over medium high heat and bring to a low boil. Reduce heat to low and cook for about 10 minutes, stirring occasionally, until the dates begin to soften. Simmer, still stirring occasionally for about 5 minutes until mixture has begun to thicken. Remove from heat and set aside to cool. We'll come back to it after making the dough.
