Baked Chai Latte Doughnuts and Vanilla Bean Icing (Vegan)

Ingredients
Chai Doughnuts:
1/2cupcoconut oilmelted
1 1/4cupssugar
1/2cupapplesaucepumpkin puree, or sweet potato puree
1cupplant-based milk
2teaspoonsvanilla extract
1tablespoonbaking powder
1/2teaspoonsalt
1/2teaspooneach of: clovesginger, and cardamom
1teaspooncinnamon
3/4cupboiling water + 1 black tea bagreserve 1/4 cup for icing
2 1/2cupsflour
Vanilla Bean Icing:
1/4reserved black tea
2 1/2cupspowdered sugar
scrapings from 2 vanilla beansor 1 teaspoon extract
1tablespooncoconut oilmelted
Instructions
Pre-heat oven to 350 degrees F (180 C) and grease 1 or 2 non-stick doughnut pans with oil.
In a large mixing bowl whisk together oil and sugar. Whisk in applesauce, milk, 1/2 cup black tea, and milk. Add all other ingredients for doughnuts and stir until well mixed.
Spoon batter into doughnut pan and fill each doughnut to the line. Bake for 18 - 22 minutes until golden brown. Remove from oven and cool completely.
Stir together ingredients for icing and spread desired amount on doughnuts. Allow icing to dry before serving.
