Carrot Ginger Orange Muffins (Vegan+GF)

Muffins are a perfect snack or breakfast for busy days. This simple recipe is made without refined sugars, flours, or oils and they're gluten free.

Servings 7 - 8 muffins


  • 1/4 cup applesauce
  • 2 oranges (juice + zest)
  • 1/4 cup maple syrup
  • 1 cup carrots, grated
  • 2 tablespoons minced ginger (or ginger puree)
  • 1 cup quick oats
  • 1 cup oat flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla


  1. Preheat oven to 350 degrees F (180 C) and line a 12-count muffin tin with about 8 paper liners (alternatively you can use silicone muffin liners *see note)

  2. In a medium mixing bowl, stir together the maple syrup, applesauce, vanilla extract, orange juice, and zest. Add in the remaining ingredients and stir until smooth.

  3. Divide the batter into prepared tins and bake for 25 - 30 minutes until the tops begin to slightly brown. Remove from oven and cool before eating. Store in an air-tight container.
