Edible Gifting Week #2: 8 Homemade Spice Mixes (Vegan+GF)
I’m not sure this necessarily qualifies as a recipe but can’t we all use a little more spice in our lives? These homemade spice mixes are so easy and they make gift giving so simple. This post is all about how to make homemade spice mixes In case you missed yesterday’s post, I’m doing a week of edible gift ideas for you guys. I think everyone has at least one of those people that are impossible to buy for every year. So hopefully one ore two of these posts will help inspire you. Something that got really old really fast when we first moved here was the way that spices and herbs are…

Tex Mex Chili & Cilantro Cornbread Bowls
Baby, it’s cold outside and I need to make something cozy! The past few days here have been getting pretty darn chilly, to say the least, and there’s nothing more comforting on a cold day then having a nice hot meal. As a result of the cold rainy/snowy weather, it has inspired me to come up with a new cozy recipe. I think meals like this are also great to have in mind during the holiday season as well. You know, when you can’t stomach another plate of mashed potatoes and stuffing (I honestly can’t imagine ever getting tired of that but maybe you do, lol). Regardless, it’s good to have a nice…

Loaded Sweet Potato Chili Cheese Fries (Vegan+GF)
Okay, major confession time…… I’ve never made sweet potato fries before. Don’t judge, it’s just that most of the french fry lovers in my family claim to hate sweet potatoes so I’ve always felt it would be a pointless venture. But now there will be no going back. I’ve opened the door to homemade french frying and everyone knows that they can be done. Fact: there will be more fries happening, a lot of em, and very soon. I think that if regular potato fries went up against sweet potato fries in a competition to see which tastes better chili-cheesified, the latter would win hands down every time. Sorry regular tatos, we’ll still…

Broccoli “Cheddar” Brown Rice Risotto (Vegan+GF)
I don’t think it’s possible to not be in the mood for cozy comfort food, it doesn’t matter what time of year it is. Even with it getting into Spring here, a big one-pot dish of warm and creamy happiness is always welcome, and I know it is for all of you going into Fall. My Aunt and cousin are still here and it’s been so great having them, but also extra busy. I’m getting better at busy, but I definitely still have a lot of room for improvement. We’re all having so much fun watching my aunt experience another culture. the first day she was here she put powdered sugar in her coffee…

Vegan Sweet Potato Ginger Carrot Soup & Cinnamon Toasties (Gluten Free)
This post is all about Vegan Sweet Potato Ginger Carrot Soup A Soup That is So Healthy It works so well, actually, that this soup is border line addictive, and you’ll probably feel guilty like you’re overindulging . The good news is that, for once, this is a recipe that you can feel good about going back in for seconds on because it’s full of pure nutrition. A Note on the Color of This Soup I just remembered that my soup was not as orange as it should have been because I used a white variety of sweet potato so all the orange is coming from the carrots in the pics. If you’re wanting…

Tex-Mex Twice Baked Potato Skins (Vegan+GF)
How do you feel about potato skins? I’ve always been a huge fan of making use of extras and scraps when I’m cooking. I mean, those things can really add up when you do a lot of cooking at home. Potato skins are one of the things that I hate throwing away when making recipes such as mashed potatoes, or baked potatoes. Personally, I’d just leave the skin on for the recipe but not everyone likes they’re mashed/baked potatoes that way so there’s usually some waste. That’s why I love the idea to make a whole separate recipe with them and I was feeling some Mexican vibes. I don’t know about you, but…

Cocoa Peanut Mole Jackfruit & Cilantro Orange Rice (Vegan+GF)
Hey, great news is that the days have been consistently getting brighter, longer, and warmer. Yay, Spring is a commin! You are probably hoping I get to the food soon and not jabber all day so here it is. Mole is the topic I’m supposed to be typing about. Okay, and it’s pronounced (mo-lay) not (mol) like the underground mammals that destroy your lawn or the ugly growth on someones face that you try so unsuccessfully not to stare at. Mo-LAY, got it? Okay cool. So I don’t get credit for thinking up this one. Actually, this recipe is one of the things that my Mom used to make when I was growing…
