Mediterranean Roasted Eggplant Dip “Baba Ganoush” (Vegan+GF)
Need a little inspiration for some Summer snacking? The weather finally got hot here and I think it’s going to stay that way. I say at least for the following months. It’s alright with me though. I know all too well that the cold will return soon enough. As you know, one of my favorite ways to take advantage of each season is to make something delicious. So if you caught my recent posts you may know that I’m doing this little self-challenge. My goal is to start expanding my normal vegetable choices to things I don’t use as much (or never). Eggplant is not something I’ve tried before but rarely, if…

Chimichurri Mushroom Tacos with Cilantro Pineapple Slaw
Happy Taco Friday! -> I know that’s not exactly a thing but it should be a thing. Actually, scratch that. Honestly, I mean don’t you think the very notion of confining tacos to a single day is preposterous?? I certainly do. Here’s to taco freedom for the world! Who’s with me? On a quick side note (feel free to skip over this), has everyone seen Beauty and the Beast already except me? I’ve been so excited to see it since I first found out about it and I was going to go with some of my family but then some things came up. My parents and some of my sibs needed to go to…

Spicy “Cheddar” Chili Queso Dip (Vegan+GF)
Some of my absolute favorite recipes are the ones that remind me of different people and times in my life. I’m guessing it’s the same for you. What is it about a specific taste or smell that can immediately put you in a favorite memory, it’s crazy? So even though this dip is a pretty simple, and also fairly generic, recipe I still feel like it’s worth sharing for those of you who haven’t had it. Growing up, it was pretty often that my dad, or my uncle who lived next door at the time, to invite some guys over to watch a UFC fight or a football game. I’m not gonna lie…

Spicy Cajun Fried Cauliflower & Louisiana Remoulade (Vegan)
This recipe was supposed to be an onion. Okay, that doesn’t make sense on it’s own so let me explain. Much like every other idea anyone has ever conceived, all of my creations start with a little inspiration and turn into something else. Sometimes they work, but other times…….not so much. Yeah, so if by some miracle you have ever gotten the impression that things are always sunshine and rainbows for me or that everything turns out perfect in my kitchen, then clearly you haven’t looked very closely at this blog. In fact, it’s usually a, (how do they say it in old movies?) oh yes, a shambles. Things are usually a shambles…

Wasabi and Sweet Pea Hummus (Vegan+GF)
Some of my favorite memories revolve around food and I’ll bet the same is true for you. Food is a common ground for all of God’s living things. I mean, we may all have our own style of doing it, but everyone has to eat. My mom used to call me her little gourmet when I was younger because she could get me to eat all kinds of foods that most other kids would have never eaten in a million years. One of which was sushi. I love, love, LOVE sushi and did I mention that I kind of like sushi! I wish I had a plate of it right now accompanied by…

Homemade Peanut Butter (Vegan+GF)
Peanut butter is a huge staple in our house, and we use it almost everyday. As you know, I love making homemade things so this is one I had to share! I have only made peanut butter once in my life and it was unintentional. I was actually trying to make peanut flour for some recipes but I processed it too long. I can’t believe I haven’t made it more often. It is totally addicting and so easy! Skip the long ingredient lists on store-bought peanut butters by making it yourself. It's easy, cheap, and delicious of course! You can also make chocolate peanut butter, add spices, or add chocolate chunks. If…
