Mediterranean Roasted Eggplant Dip “Baba Ganoush” (Vegan+GF)
Need a little inspiration for some Summer snacking? The weather finally got hot here and I think it’s going to stay that way. I say at least for the following months. It’s alright with me though. I know all too well that the cold will return soon enough. As you know, one of my favorite ways to take advantage of each season is to make something delicious. So if you caught my recent posts you may know that I’m doing this little self-challenge. My goal is to start expanding my normal vegetable choices to things I don’t use as much (or never). Eggplant is not something I’ve tried before but rarely, if…

Traditional Ukrainian Red Borscht Soup (Vegan+GF)
Today we’re talking about Ukrainian red borscht, have you heard of it? It’s a European favorite, specifically in Russian and obviously Ukraine. This post is all about Ukrainian Red Borscht Haha, I have to reference a children’s movie and prove my inner kid here. If you’ve seen the Dreamworks animated movie Madagascar 3 then you might remember the Russian tiger mentioning his love for this soup. I also have a special love for this recipe because it was one of the very first ones that I shared here on my blog. Due to it being a popular post I felt it was long passed time to update it. So in case you’ve never…

Roasted Purple Potatoes & Green Beans
You know those nights when you just can’t even think about making something complicated for dinner? Maybe it’s been a really long day, or even week, and the thought of preparing anything that requires more than minimal effort is really unappealing. Usually in my house this is when the freezer gets opened by one of the boys and the frozen pizzas go into the oven….or worse, the microwave (oh the horror!) You’d maybe think that this type of thing doesn’t happen in my house since I’m constantly sharing recipes. Well, you guys, it totally does sometimes. In fact, on a busy day when I’m working on specific recipes sometimes I just haven’t made…

Loaded Enchilada Potato Skins (Vegan+GF)
I’m breaking away from my typical sugar-laden weekend recipe and sharing a savory one today instead, but don’t worry, there’s lots of cheese, and, AND, tatoes! So that’s okay, right? Everyone good with this? You know what my favorite recipes are? I mean, not that I don’t completely love the recipes that are quick and easy (like this and this), or ones that are just downright fun to make (like THESE). I also love the ones that are a sure thing for making everyone who eats them extremely happy. Nor am I saying that this recipe doesn’t fit any/all of these categories, that’s what’s awesome about it. It not only is fast, fun…

Crispy Baked Zucchini Wedges with Basil Chimichurri (Vegan+GF)
Hey guys! So as I’m sitting down to write this post right now I realized that it’s snowing outside and whatever I was going to write is now completely forgotten. I’ve lived in Chile for almost 2 years now and I’ve never seen snow aside from on the mountain peaks. I’ve certainly never seen it stick to the ground for any length of time so I’m pretty excited right now. I can already tell that it’s about to turn back into rain a wash away the beautiful white blanket but I don’t care. I’m just going to be happy for a moment and enjoy the beauty of God’s little gift while it lasts. Moving here…

Mozzarella Stuffed Pesto Pizza Monkey Bread (Vegan)
I’m not really sure why they call this type of bread a monkey bread. I suggested that maybe it’s because when everyone is picking at the delicious pieces it resembles the way primates groom each other and eat their findings. I was dumb enough to mention this while my brothers were around so, of course, they gave me their opinions and since my idea was already borderline gross they had to outdo it. One of them said that it’s because it looks like a giant monkey brain like on Indiana Jones and I won’t mention what the other one said. Thank you boys, that’s just the mental picture that will make everyone want…

Spicy Cajun Fried Cauliflower & Louisiana Remoulade (Vegan)
This recipe was supposed to be an onion. Okay, that doesn’t make sense on it’s own so let me explain. Much like every other idea anyone has ever conceived, all of my creations start with a little inspiration and turn into something else. Sometimes they work, but other times…….not so much. Yeah, so if by some miracle you have ever gotten the impression that things are always sunshine and rainbows for me or that everything turns out perfect in my kitchen, then clearly you haven’t looked very closely at this blog. In fact, it’s usually a, (how do they say it in old movies?) oh yes, a shambles. Things are usually a shambles…
