Crunchy Maple Cinnamon Pecan Cereal (Vegan+GF)
It’s another cereal recipe. What, what! You’re probably thinking, why would you make cereal when you can just go out and buy it? Well my friend I’m so glad you asked. I am so glad you asked. Okay, I don’t know about you, but I have this major love for cereals and granola. In fact, it’s very nearly an addiction. If it’s crispy, toasty, sweet and flavorful I’m hooked. Oh, and if you add a hint of salty to the equation I’m a goner. Do you think there’s a support group for this? CAD (cereal addicts anonymous) maybe? I’m telling you, it’s dangerous for me to have too much around. The funniest…

Maple Almond Brown Rice Pudding (Vegan+GF)
Have you ever wondered, “what the Dickens is gruel?” Hey, me too! There was a day a long time ago when I would spend hours of my day lost in a good book. I haven’t been reading as much recently but I hope to get back into it soon. I really enjoy reading the classics, (#MajorAustenFan) and what’s a bigger classic than A Christmas Carol? I mean there are like fifty bazillion film adaptions of it. I heard somewhere once that it’s the most adapted-into-film book ever written. I’m not sure how true that statement is but I’d put my money on it being pretty close to fact. I know I’ve seen a…

Broccoli “Cheddar” Brown Rice Risotto (Vegan+GF)
I don’t think it’s possible to not be in the mood for cozy comfort food, it doesn’t matter what time of year it is. Even with it getting into Spring here, a big one-pot dish of warm and creamy happiness is always welcome, and I know it is for all of you going into Fall. My Aunt and cousin are still here and it’s been so great having them, but also extra busy. I’m getting better at busy, but I definitely still have a lot of room for improvement. We’re all having so much fun watching my aunt experience another culture. the first day she was here she put powdered sugar in her coffee…

Warm Barley Salad with Roasted Butternut Squash & Brussels Sprouts (Vegan)
I know a lot of you are getting ready for bathing suit wearing, lemonade drinking, and all of the other things that come with summer but down south we’re all pulling out our fuzzy sweatshirts and wool socks. Salads are one of the things I love about the warm half of the year. You can throw in whatever you want and it’s a great way to take advantage of all of the fresh produce available, but in the fall and winter it’s not as appealing to eat cold veggies. I don’t know about you, but I crave cozy meals when I’m cold and warm salads are just that, super cozy. They still have…

Pomegranate Chocolate Chip Granola Bars
You’d think I’d be over the season difference after living in the Southern Hemisphere for almost two years but….I’m not. It still really bugs me that I can’t have my cake and eat it too. What I mean is that the weather changing is making me want to get ready for the holiday season which, I still can’t seem to make my little North Hem head grasp, is not until summer here. It’s really annoying but I think you’re all probably sick of hearing this rant over and over so I’ll stop. Just know that if you’re up north thinking it’s weird to be posting pomegranates in April, it’s much weirder for me…
