    Rainbow Veggie Cobb Salad

    September 3, 2018

It’s been a while since I shared a good salad recipe I’d say.   Salads are the one thing that I get really carried away with when I start making them. I don’t know, there are just so many possibilities that I end up add everything and the kitchen sink. Please tell me you are like this with something in your life at least so I don’t feel so strange. With this salad I started out with plans to make a simple and basic cobb style salad with my favorite toppings. One of those toppings is what I like to call “fakin” because it’s so perfect for all the people…

25-Minute Thai Peanut Soba Noodle Salad

    July 30, 2018

I’m such a fan of Asian flavors you guys. If I didn’t try to keep things interesting here I’d probably just end up sharing stir-fry recipes and sushi every single day. As it is, I think I share quite a few recipes with those flavors. This recipe is one that you might be familiar. Or, maybe it’s something you’ve never heard of and it sounds super intriguing to you. I know I did when I first heard of something like this. First of all, can we just take a second to acknowledge the double standards within cultures when it comes to food. For example, who decided that pancakes and waffles…

Farro Salad + Pickled Beet & Almond Butter Dressing

    July 7, 2018

Okay, okay, so I might have basically already lost you at the title of this recipe. What can I say? I just prefer upfront honesty.   So I seriously considered only sharing the dressing for this recipe and letting the salad be the “serving suggestion” because that’s pretty much all it is. Here’s what happened. -> I was craving a big bowl of greenness, and if you can’t possibly fathom how someone could for reals be that excited about salad, that’s okay we can still be friends ;). Anyway, what ended up in the bowl was totally by chance based on what I had that day. This dressing though, it’s…

    Creamy Avocado Pesto Zoodle Salad

    July 3, 2018

I think I’ve discovered my favorite new Summer side salad!   So I know I totally dropped the ball on getting a red, white, and blue themed recipe up for all my friends here in the States. I don’t know, I just had so many recipes lined up before the 4th that I had to share. The good news is that this salad is perfect for a picnic on a hot Summer day. In fact, all the bursting colors sort of remind you of fireworks, no? I’ve had a spiralizer for a while but because it’s not a tool I keep in plain sight I tend not to use it…

    Crunchy Pinto Bean Salad Sandwich

    June 25, 2018

So another week begins. I hope you had a great weekend.   We went to see the new Jurassic World movie and I really liked it. Then I drove up to Sandpoint yesterday with my sister and we hiked to Snow Creek Falls and took lots of photos and video so I’ll be sharing that soon.   I also did some recipe testing over the weekend. Tell me, were you a fan of tuna, egg, or chicken salad sandwiches as a kid? Did you ever consider what it might be like to star a bean in this recipe? I really hadn’t so that’s why I was extremely surprised at how…

    Italian Broccoli Marinara Pasta Salad

    June 13, 2018

I’m gonna be honest, I really wasn’t sure what to call this. So I was walking through the produce section at the grocery a few days ago and passed the basil and then the pestos and got hit with the most random craving for something Italian with red sauce hit me. Oh, and I got some pine nuts too, those were a huge part of the inspiration. I think the main takeaway that we can all get from this story is that you should never shop hungry. Hey, but I’m so happy about it on just this one occasion because it ended in me finding a new favorite pasta salad-ish…

Moroccan Ribboned Carrot Raddicchio Salad + Blood Orange Dressing

    March 12, 2018

I know, I know, the title is fifty miles long. Sorry about that, but at least be glad that I didn’t make it as long as I could have. See, I always want to be super descriptive with you guys about the recipes I’m sharing and today’s recipe just happened to have a lot of star-worthy players in it. I actually could have made it twice as long. Something like “Moroccan Ribboned Carrot, Raddichio, Kale Salad with Tahini Blood Orange Dressing + Honey & Spice Nuts & Seeds”! Now that is quite a mouthful, right? So in reality you should thank me for sparing you that tongue twister. You’re welcome.…

*Goji Berry+Banana Smoothie:*
1 cup frozen mixed berries
2 medium bananas peeled and frozen
1/4 cup goji berries soaked for at least 2 hours in 1/4 cup water
1/4 cup chia pudding recipe above
*Optional Add-Ins:*
1 medium banana sliced
1/2 cup mixed berres

vegan cookie dough balls I used this recipe for cookie dough protein bars, but rolled it into tiny balls and used mini vegan chocolate chips instead of chunks.
cocoa nibs
granola -Instructions-
*Chia Pudding:*
Stir together the ingredients for the chia pudding in a small bowl or container and allow it to thicken in the fridge for at least 5 hours.
*Goji Berry+Banana Smoothie:*
Add the soaked goji berries (and the water they soaked in) to a blender or food processor along with the lemon juice, 1/4 cup of the prepared chia pudding, and the maple syrup. Blend until smooth then add the frozen berries and banana. Blend until you have a very thick icecream-like mixture.
*Jars:*
Layer the chia pudding with the smoothie and desired add-ins in jars or bowls. (I like to layer all the goji berries and sometimes granola or cocoa nibs throughout so you can get the crunch.)
