So it’s back to school time again and that means it’s time for some lunch! It’s long past time for some burgers. I’m writing this post from Montana where I’m camping with my sis. I say “camping” because we’re staying in a dry cabin but to me that’s pretty close to camping. Pancakes are something I really don’t make often enough. In my family there is a near even split of those who love waffles and those who prefer pancakes. Do I really need a reason for making tacos? Yeah, I didn’t think so. I’m thinking back to when I first heard of jackfruit and simultaneously heard of it being used as sort of replacement for pulled barbecue.
