Vegan Roasted Red Pepper Orzo Pasta Skillet
Dinner is on and it’s Roasted Red Pepper Orzo tonight! You know you’re onto something amazing when you decide to skip adding the cheese. This post is all about Roasted Red Pepper Orzo That’s right, I was planning to add a good amount of cheese to this recipe and once I’d finished making it I realized it was just not necessary. In fact, the flavor was so perfect that I didn’t want the cheese to mess it up by adding cheese to distract from it. I mean, this was such a classic case of “why fix what ain’t broke?”. So the topic of orzo is something of a humorous controversy in my house.…

Springtime Vibes Salad+Cilantro Almond Butter Dressing (Vegan+GF)
You guys, this salad! Omg, in case the name didn’t give it away, this salad is inspired by both my trip to California (which as I write this I’m about to pack but if your reading it I’m probably chilling in San Diego by now) and all things Springtime as well. It’s basically a little celebration in a bowl about the approach of warm weather and longer daylight hours. I can’t wait to share my trip with you later this week. I can guarantee I’ll have way too many pictures. I’ve heard a lot of you guys saying that it’s been really cold where you live in different places across the US and…

Spicy Thai Vegetable Tahini Stir-Fry Ramen (Vegan+GF)
And just like that we all wake up to December. Happy fri-yay and happy December my friends! It’s funny, you’d think the reality of time moving on would eventually set in after a while……..but somehow it’s always surprising to me. You know what I mean? Well anyway, I realized there’s been a lot of sweet stuff around here recently and I thought it was about time I shared something on the savory side with you guys, you know, cuz balance and stuff. Although, if life worked the way I wanted it to this time of year then we’d be able to thrive on Christmas cookies and chocolate treats all month. Of course, then…

Creamy Roasted Chestnut Potato Soup (Vegan+GF)
Can I just say that dealing with chestnuts is not exactly the most fun task in the world, which I’m sure any of you who’ve done it would agree with me. They’re just sort of high maintenance compared to what you get from them. However, I really like using them and I’ve gotta say I’ve dealt with much worse ingredients in my food blogging past so it’s not too bad to mess with them a few times a year. Plus, you all know how much I love to get into themes and stuff, and come on, chestnuts and Christmastime go together like pb&j! Am I right? Am I right???? Before I get into…

Tex Mex Chili & Cilantro Cornbread Bowls
Baby, it’s cold outside and I need to make something cozy! The past few days here have been getting pretty darn chilly, to say the least, and there’s nothing more comforting on a cold day then having a nice hot meal. As a result of the cold rainy/snowy weather, it has inspired me to come up with a new cozy recipe. I think meals like this are also great to have in mind during the holiday season as well. You know, when you can’t stomach another plate of mashed potatoes and stuffing (I honestly can’t imagine ever getting tired of that but maybe you do, lol). Regardless, it’s good to have a nice…

Loaded Sweet Potato Chili Cheese Fries (Vegan+GF)
Okay, major confession time…… I’ve never made sweet potato fries before. Don’t judge, it’s just that most of the french fry lovers in my family claim to hate sweet potatoes so I’ve always felt it would be a pointless venture. But now there will be no going back. I’ve opened the door to homemade french frying and everyone knows that they can be done. Fact: there will be more fries happening, a lot of em, and very soon. I think that if regular potato fries went up against sweet potato fries in a competition to see which tastes better chili-cheesified, the latter would win hands down every time. Sorry regular tatos, we’ll still…

Broccoli “Cheddar” Brown Rice Risotto (Vegan+GF)
I don’t think it’s possible to not be in the mood for cozy comfort food, it doesn’t matter what time of year it is. Even with it getting into Spring here, a big one-pot dish of warm and creamy happiness is always welcome, and I know it is for all of you going into Fall. My Aunt and cousin are still here and it’s been so great having them, but also extra busy. I’m getting better at busy, but I definitely still have a lot of room for improvement. We’re all having so much fun watching my aunt experience another culture. the first day she was here she put powdered sugar in her coffee…
