Easy Baked Fries + Guacamole
I can hardly call this a recipe as it’s just so basic. Except, I’m learning over and over how nice those types pf recipes are anyway. Nobody wants to spend all day in the kitchen cooking, every, single, solitary day, agreed? In fact, most of us want to get in, get food made (with minimal mess), and have it ready to devour. Am I right? I think I’m right. Oh, and I just realized today’s the first day of Summer here in the Northern Hemisphere. Happy Summer my friends and I hope you’re getting ready to live it up this season. Honestly, I didn’t plan this recipe for today but I can’t…

Chocolate Chili Avocado Truffles
Another week starts and I think that calls for some chocolate…… How was your weekend? Mine was pretty good. I took my two younger brothers and my cousin with me to see A Quiet Place at the theater and it was really good. If you like suspenseful movies I’d definitely recommend it. The movie literally has about 6 actors in the entire thing but the acting was incredible, especially from the kids. That was Saturday, then I spent Sunday almost entirely in the kitchen working on recipes and cooking, oh and mountains and mountains of dishes to wash (bet you guys don’t think about all the dishes behind a food blog). Seriously you…

Roasted Brussels Sprouts Brown Rice Salad with Sesame Orange Dressing
Wow, it feels so foreign to be back to blogging about food after two weeks of traveling and so much other stuff going on in my life. I have to say the break was amazing for me and I wanted to thank you for understanding the pause in my usual post schedule. I also could have done without that awful few days of being sick but I believe there’s a reason for everything and I’m choosing to look at it in a positive light. So since getting home from traveling I’ve been on this major salad craze. Personally, I have no stipulations or rules for what the definition of a salad can be.…

Asian Tempeh Tacos with Black Sesame Slaw
I thought I’d try starting off the week with something on the savory side since typically I seem to lean towards the sweets on Mondays. I’m trying to start off the year being good. (Don’t worry though, I’ve got plenty of sugar on the horizon 😉 ) Is it just me or does it feel like we’ve been in this new year for way longer than we really have? It’s barely been a week but somehow it seems more like a month to me. So what’s been going on in your world? To give a little bit of real life updates on my life, it’s been fairly the same as always. Our house is…

5-Ingredient Avocado Key Lime Pie Popsicles (Vegan + GF)
I’ve got a really fun recipe to share today guys! Well, at least I think it’s pretty fun. Any time a recipe can be healthy enough to count as breakfast, easy enough to make with the kiddos, require minimal ingredients and labor, and taste great any time of year, now that’s a really fun recipe in my book. So I haven’t made popsicles in a really long time and my 7-year-old sister has been more than willing to help inform me of this. She’s been on this huge popsicle kick recently which inspired me to dig through my ever growing collection of kitchen gadgets the other day to find my molds. It’s sort of a…

Maple Drizzled Pistachio & Avocado Bagel Toast (Vegan)
Here’s me following a trend just for the heck of it again. On a scale of one to ten how lame do you think that is? I mean, I don’t think of myself as being follower of the norm by any means, and way more often than not I stay as far from a fad as I can. However, I’ll admit that it’s a rarity, but sometimes a the bandwagon gang knows their stuff, and I’m pretty sure this is one of those times. Avocado toast people, it’s where it’s at! I think the craze started because avo makes a way healthier alternative to just about anything that would usually make an appearance on…

Roasted Butternut Squash, Quinoa, & Lentil Burritos (Vegan)
Who wants a burrito? These are fairly simple to make but there is the roasting part that takes a few minutes. I don’t know if you remember the last butternut squash recipe I made but I peeled and cubed it prior to cooking. That’s pretty much the only way to get pretty cubes but for this recipe I only want soft squash. I wasn’t in the mood to do any annoying peeling either, so I just sliced the thing in half, shoved it in the oven until soft, and then scooped out what I wanted. Of course, then I still ended up peeling the squash because I can’t bear to throw away perfectly good food…
