Easy White Bean Herb & Vegetable Soup (Vegan+GF)
It’s been a very grey week so far and I’m feeling like a warm comforting soup is in order today. Well, if the recent state of grocery shelves are any indication, there are a lot of people with a lot of beans right now. Hey, I’m not complaining about it, I think it’s pretty awesome actually. Beans are an extremely healthy staple food that seem to get ignored under most circumstances. Let’s just count it as one of the positive side-effects from this crazy time, beans finally getting the appreciation they deserve. Another positive side-effect is that way more people are in their kitchens cooking instead of eating out all week. I’d say…

Chipotle Inspired Sofritas Burrito Bowls (Vegan+GF)
I’m feeling some serious taco Tuesday vibes today, what do you think? Wow, it feels like it’s been ages since I’ve added a fresh recipe to the blog. Oh yeah, it has! This whole deal with moving a website has been way more than I bargained for if I’m being honest. I’m happy to say that I’m nearly done sorting everything out but I was just dying to share a recipe today. I mean, I haven’t added a new one all year! These bowls are a nod to the popular restaurant chain’s menu item, sofritas. I’d never actually tried this, much less made it, until this past Summer. My cousin came to visit…

Harvest Time Apple & Pumpkin Chili (Vegan+GF)
Please tell me you’re week needs some delicious comfort right about now because, if so, this is exactly what you need! How do you feel about chili? To me it always seems like chili is one of those meals that doesn’t get appreciated enough. I don’t get it, it’s so homey and chock full of flavors, oh, and you can load it with so many good things like guacamole and eat it with cornbread, YUM!. Plus, it’s versatile and you can do so many things with it (Hello chili-cheese fries!), what’s not to love? I have to tell you, even within my own family chili isn’t the most popular. I mean, everyone will…

Crunchy Pinto Bean Salad Sandwich (Vegan+GF)
So another week begins. I hope you had a great weekend. We went to see the new Jurassic World movie and I really liked it. Then I drove up to Sandpoint yesterday with my sister and we hiked to Snow Creek Falls and took lots of photos and video so I’ll be sharing that soon. I also did some recipe testing over the weekend. Tell me, were you a fan of tuna, egg, or chicken salad sandwiches as a kid? Did you ever consider what it might be like to star a bean in this recipe? I really hadn’t so that’s why I was extremely surprised at how good it was the first…

Roasted Veggie Sweet Potato Power Bowls + Yogurt Tahini Sauce
Wow, it’s Friday already???? I have no clue what happened to this week, but it flew by. Sorry I’m freaking out a little bit but today marks the 1 week countdown until Christmas eve, eve! Did you realize that???? I know this happens every year, and I do this same thing every year, but I’m being completely honest when I say that I’ve never had a Christmas sneak up on me like this one. I’m both extremely excited and slightly sad that it’s so close to being passed us. Not to mention I still have so many things to get done this next week, as I’m sure you do too. We clearly have all…

Roasted Butternut Squash, Quinoa, & Lentil Burritos (Vegan)
Who wants a burrito? These are fairly simple to make but there is the roasting part that takes a few minutes. I don’t know if you remember the last butternut squash recipe I made but I peeled and cubed it prior to cooking. That’s pretty much the only way to get pretty cubes but for this recipe I only want soft squash. I wasn’t in the mood to do any annoying peeling either, so I just sliced the thing in half, shoved it in the oven until soft, and then scooped out what I wanted.  Of course, then I still ended up peeling the squash because I can’t bear to throw away perfectly good food…

Easy Black Bean and Lentil Chili (Vegan+GF)
Did someone say they were feeling chilly? or was that chili? I couldn’t tell cuz, honestly I’m feeling both! In recent years, my family has become huge fans of Chili. My parents and older siblings have always liked chili, but my younger siblings have not liked it up until recently. So as result, I did not make it that often. But now, it’s a household favorite so I am always trying to put a little spin or tweak to it here and there. I love adding lentils to chili because they hide really well. We also like to serve it with cornbread. I have shared a few versions of cornbread but THIS ONE is…
