Chipotle Inspired Sofritas Burrito Bowls (Vegan+GF)
I’m feeling some serious taco Tuesday vibes today, what do you think? Wow, it feels like it’s been ages since I’ve added a fresh recipe to the blog. Oh yeah, it has! This whole deal with moving a website has been way more than I bargained for if I’m being honest. I’m happy to say that I’m nearly done sorting everything out but I was just dying to share a recipe today. I mean, I haven’t added a new one all year! Personally I always like the bowl style Mexican food, so rice. I hope you’re into that also because this taco Tuesday is gonna be bowl-style! Okay, so here’s the game plan I always…

Roasted Plum BBQ Falafel Bowls
I really hope you’re not getting tired of bowl-style food you guys because I just love it. So I guess most people’s first thoughts at the sight of some crates full of plums wouldn’t be barbecue sauce, but you know, I’m weird like that. Yes, that’s the idea that came to me when some of our close friends shared some of the abundance from the plum trees around their home. I thought I’d just see how many were left after spending a good part of one rainy afternoon washing, cutting, and freezing tons ofย them. It just wasn’t enough though, there were still plenty more to work with so a vat of sauce was…
