Soft Baked Gingerbread Cookies (Vegan)
Every holiday season needs gingerbread to be complete, can we agree? When I was a kid it was a family tradition to make gingerbread houses every year. We usually had a little friendly competition to see who’s house was the best. It was fun motivation for the little ones to not give up as soon as they got bored and also to not eat all their sweet decorations before the process was done. The downside of our tradition was always that we’d use those pre-assembled kits that tasted like drywall. They’re so convenient if you have kids and don’t want to spend hours baking and assembling, but for eating they are a no-go.…

Deep Dish Chocolate Chip Cookies (Vegan+GF)
So um, If I ever stop coming up with variations of a chocolate chip cookie you’ll know my body’s been inhabited by aliens or something. Hey, I can’t help it, there’re just so many ways you can recreate this classic treat. That, and I really just love taking photos of them. What can I say? They’re very aesthetic. Okay why would you do a deep dish cookie you might be wondering? Seriously though, is anyone actually wondering that? Hello melty pools of chocolate that can acceptably be eaten with a spoon, double the thick and chewy texture and gooey center, and then there’s always the option to throw some ice cream on top!…

Double Chocolate Chip Hazelnut Cookies (Vegan+GF)
I’m trying to keep in mind that each day of this continued isolation brings us one day closer to it being over. It helps a little, but gyms are still closed along with everything else. On the bright side I’ve been hiking and making time for lots of things I wouldn’t usually do. Also, I think I might be spending even more time in the kitchen than usual if that’s even possible. If anything can help brighten the mood these days, it’s baking anything with chocolate. Cookies being probably the best choice in my personal opinion. Please tell me you love chocolate hazelnut butter as much as I do because these cookies…

Chocolate Covered Peanut Butter Candy Bars (Vegan+GF)
One of my favorite quotes, and the most applicable to my life, is “Necessity is the mother of invention” – Plato I’ve lived in some pretty remote areas where ingredients weren’t available like they are in a city or large town like I live in now. In other words, I had to come up with substitute ingredients for almost everything I wanted to make. While it wasn’t always fun or easy, it definitely expanded my thinking and led me to come up with some great ideas. One of the better ones being these bars. I remembered them recently while talking with family. That’s when I realized that they had to be something I…

Sea Salt & Tahini Chocolate Chip Cookies (Vegan)
If I ever run out of new ways to reinvent the chocolate chip cookie I’ll probably have to stop blogging all together. Like “Let’s pack it up guys my work’s done here.” But seriously, these are gonna be a popular addition to my chocolate chip cookie recipe collection. If you haven’t noticed I’ve created a few. Lol.🍪🍪🍪🍪 This is one if f those times where I had a random idea that I just needed to make as soon as possible. You know, like those great ideas you get in the middle of the night or in the shower. Well, this was one of those. Besides, sea salt and tahini just sound so good…

Healthier Oatmeal Cream Pies (Vegan+GF)
So were you a fan of Little Debbie’s famous cream pies as a kid? I liked them but I could never figure out how I really felt about them because they were obviously not healthy at all. On the other hand though, you sort of felt like they should be because they were oatmeal, you know? That’s pretty much what this recipe is doing. I mean, they could be a lot worse but I’ll be honest and admit they’re not exactly the “healthiest” choice. They’re just a healthier alternative. I just figured that if I was going to share a fresh treat this January it should at least pretend to be healthy, right?…

Maple Leaf Cream Filled Sandwich Cookies (Vegan)
The leaves have gone from just barely hinting at color to covering the ground in nature’s confetti. Of course, Fall wouldn’t be complete without baking some treats and cookies are always a crowd favorite. So who else loves those Maple leaf cookies from Trader Joe’s? If you’ve never been to TJ’s then you may not know what I’m talking about. These cookies are a classic and have always been a favorite of my mom’s. Now, they’re not exactly health food, obviously, but balance is a good practice and this time of year just needs occasional treats. Besides, a sweet cookie to go with a warm mug of afternoon tea or coffee is just…
