Easy White Bean Herb & Vegetable Soup (Vegan+GF)
It’s been a very grey week so far and I’m feeling like a warm comforting soup is in order today. Well, if the recent state of grocery shelves are any indication, there are a lot of people with a lot of beans right now. Hey, I’m not complaining about it, I think it’s pretty awesome actually. Beans are an extremely healthy staple food that seem to get ignored under most circumstances. Let’s just count it as one of the positive side-effects from this crazy time, beans finally getting the appreciation they deserve. Another positive side-effect is that way more people are in their kitchens cooking instead of eating out all week. I’d say…

Cocoa+Oat Protein Waffles (Vegan+GF)
So I know there are a lot of things in life right now that can’t be fixed with simple answers but I feel like waffles are the answer to a lot of problems. As always I’m going to my happy place and drowning worries in delicious things like these waffles. Okay, not really but waffles are always a good decision.😍😋 Speaking of decisions, I recently made one of the best purchases of my entire life……..a miniature waffle maker!!! When I say mini, I’m talking like 4 inch waffles. Omg, they’re SOOOO cute!!!! Yeah, definitely the best buying decision ever. ;P I shared them on my socials a while ago but now I’m sharing…

Blackberry Activated Charcoal Smoothie Bowl (Vegan+GF)
I’m back from Hawaii but I’m still craving all the fruit. So charcoal in a smoothie, health benefit or aesthetic benefit? Let’s be real, it’s both. Ever since I started taking food photos I’ve definitely loved jumping on any visually captivating health trends. It’s not just for looks though. Charcoal has a lot of reasons to be consumed aside from it’s striking color. I remember my mom using it when my youngest sister was born because it’s great for helping relieve gas in infants. Another benefit, it’s great at filtering toxins. Have you ever used one of those nifty water-filtering pitchers, yeah well those have charcoal in them. It has a similar effect…

Cookie Dough Rawnola (Vegan+GF)
Wow, January is over already? That was so fast! I have a feeling the rest of the year isn’t going to be any slower, but I’m kind of wishing there was a pause button. You know, so we could get our lives together a little bit. I don’t know, maybe that’s part of the beauty of life, that none of us know what we’re doing. What I do know is that 2020 has plenty of space for all the healthy treats. This being one of my favorites lately. Now before I tell you about the recipe maybe some disclaimers are in order. Again, this is 2020 and things aren’t the same as they…

Persian (Iranian) Jeweled Basmati Rice Pilaf
I hope you’re all in the mood for a little excursion with your tastebuds! Hey, it’s the no-passport-required way to travel, don’t you love that? So this is me updating an old recipe from quite a few years ago. I remember the first time making this a friend of mine offered to share some of his awesome cooking with me and my family. He said he was going to bring over some Persian food (with extra saffron) for dinner to go with whatever sides I wanted to make. I’ve always been thrilled with those kinds of arrangements. I got to be in charge of the sides for that dinner. In fact, since I’m…

Spicy Sweet Vegetable Stir-fry (Vegan+GF)
Can I just say that it's really cold out, and I don't like it! I'm so ready for Spring, and yeah, I know it's only January.........ugh!!!! My strategy for staying warm usually involves running around the kitchen and standing near hot surfaces to avoid turning into a human Popsicle. I really love baking sweet things to eat with hot drinks like cocoa and coffee too, that's always a solid option. But we're actually not talking about sweets today (I know, kinda sad right?)

Spiced Sweet Potato Bread + Brown Sugar Icing (Vegan)
The decade is almost over guys! I know everyone’s posting retrospective photos, talking about goals for the next decade, and basically just wondering how it passed so quickly. Me? I’m honestly not too concerned about it. I mean, it’s exciting to be starting a new global chapter for sure. I guess I’m just not so into focusing on new year’s (or in this case new decade’s) resolutions as if that’s the only time to make big life decisions. I sort of prefer to make them on a daily basis. Besides, I’ve never been the greatest at sticking to arbitrary resolutions set out of obligation. I think if something matters to you you’ll stick…
