Chipotle Inspired Sofritas Burrito Bowls (Vegan+GF)
I’m feeling some serious taco Tuesday vibes today, what do you think? Wow, it feels like it’s been ages since I’ve added a fresh recipe to the blog. Oh yeah, it has! This whole deal with moving a website has been way more than I bargained for if I’m being honest. I’m happy to say that I’m nearly done sorting everything out but I was just dying to share a recipe today. I mean, I haven’t added a new one all year! These bowls are a nod to the popular restaurant chain’s menu item, sofritas. I’d never actually tried this, much less made it, until this past Summer. My cousin came to visit…

Sweet Potato Black Bean Street Tacos (Vegan)
It’s Taco Tuesday peeps! The cool thing is that this recipe could also double as a meatless Monday meal too! Yeah, I think it’s about time for another taco recipe around here. Considering how big on tacos my family is it’s pretty crazy that I haven’t made them very often recently. I’m planning to make up for it by doing tacos at least once every other week and hopefully even sharing a new version with you guys each time. So technically I might have made these on a Thursday, photographed them on a Friday, and written this post on a Sunday but you guys are getting them on Tuesday so that’s what…

Spiced Chocolate Chili Java Chip Fudge Cookies (Vegan)
And here we are on another Friday and if you’re anything like me you’re wondering what happened to your week, or planning what to do over the weekend…… and possibly craving some major amounts of chocolate. Fear not, I’ve got that part covered! I’m really excited to tell you about these deep dark chocolate cookies that I’m sharing today! They are not only filled with the wonderful magic of spice and chocolate together, but I also made some homemade java chips which are basically a mocha version of chocolate chips and they are really simple. The recipe makes more java chips than you’ll use for one batch of these but I figured you…

Layered Fiesta Taco Bowls with Vegan “Bacon” Bits
I’ve got a question to ask, am I the only one who had never even heard of “bacon” made from plants until recently! Well if not, it’s totally a thing guys! Facon exists!!! At first I was averse to the whole idea and completely on team You can’t even go there! Even as a young kid I never liked bacon so I was pretty skeptical. That is, of course, until I tried the stuff. Omg peeps, it’s insane! So about these bowls, I know “bacon” may not be the most typical thing to add to your tacos, or in this case taco bowls, but I was surprised by how much it works. A few bites of these…

Churro Chips & Salted Hot Chocolate Sauce (Vegan)
I know I say this a lot so it’s probably losing its credibility…..but guys, these are Dangerous with a capital D! I decided that I needed to christen my new deep fryer (Tuck) with something delicious, but also simple so that I could keep it a no-fail situation for my first time using it. Plus, you may have noticed already, but I’m really getting into Cinco de Mayo as a theme to go with this year and churros with hot chocolate are just a well known classic Mexican food that I wanted to do something with. I feel liked I missed my Valentine’s Day opportunities for the most part and then I slacked big time…

Tex-Mex Twice Baked Potato Skins (Vegan+GF)
How do you feel about potato skins? I’ve always been a huge fan of making use of extras and scraps when I’m cooking. I mean, those things can really add up when you do a lot of cooking at home. Potato skins are one of the things that I hate throwing away when making recipes such as mashed potatoes, or baked potatoes. Personally, I’d just leave the skin on for the recipe but not everyone likes they’re mashed/baked potatoes that way so there’s usually some waste. That’s why I love the idea to make a whole separate recipe with them and I was feeling some Mexican vibes. I don’t know about you, but…

Chipotle Hummus & Fajita Veggie Taco Salad Bowls (Vegan)
I’ve come up with some pretty awesome and different flavors since I sort of took over the kitchen, but even now after all of them my family still prefers the classics. I think one of the family’s favorites will always be anything and everything that can be made in a tortilla and slathered in guac (or super hot sauce in my brother’s case). Anyway, the other day was taco tuesday, or rather taco thursday. and as always I made a bazillion tortillas to go with because there’s only like one brand available to buy here and it’s stuffed with preservatives and tastes awful. I’m not gonna lie, even though I could (and I do)…
