Persian (Iranian) Jeweled Basmati Rice Pilaf
I hope you’re all in the mood for a little excursion with your tastebuds! Hey, it’s the no-passport-required way to travel, don’t you love that? So this is me updating an old recipe from quite a few years ago. I remember the first time making this a friend of mine offered to share some of his awesome cooking with me and my family. He said he was going to bring over some Persian food (with extra saffron) for dinner to go with whatever sides I wanted to make. I’ve always been thrilled with those kinds of arrangements. I got to be in charge of the sides for that dinner. In fact, since I’m…

Chipotle Inspired Sofritas Burrito Bowls (Vegan+GF)
I’m feeling some serious taco Tuesday vibes today, what do you think? Wow, it feels like it’s been ages since I’ve added a fresh recipe to the blog. Oh yeah, it has! This whole deal with moving a website has been way more than I bargained for if I’m being honest. I’m happy to say that I’m nearly done sorting everything out but I was just dying to share a recipe today. I mean, I haven’t added a new one all year! These bowls are a nod to the popular restaurant chain’s menu item, sofritas. I’d never actually tried this, much less made it, until this past Summer. My cousin came to visit…

Sweet Potato & Avocado Sushi Rolls (Vegan+GF)
So taco Tuesdays are great and all but what if we made sushi Tuesdays a thing? I personally think it’s a pretty great idea, especially during the Summer. I’ve gotten a little bit spoiled by where I live right now. We’re so used to having mild, comfortable weather this time of year but the last few days have been pretty hot. On top of that there have been some challenges with our AC not working and that’s no fun. Yeah, so I’ve been trying to think of some no cook meals to prevent the house from being too hot and sushi is perfect. Now obviously the rice has to be cooked which…

Lightened-Up Butternut Squash Curry + Forbidden Black Rice
Is there still time to cram in a few more healthy January recipes? Good, because I’ve got one today that I’m hoping you’l love. I don’t make Indian food nearly as often as I should. I thoroughly enjoy all the flavors involved in curries but the reason I don’t add these recipes to the menu too often is because not everyone in my house likes them like I do. Hey, that’s fine with me by the way, as a foodie I’ve accepting taking the teasing I sometimes get from my family about some of the strange foods I love. For example, I love brussels sprouts. I know it’s not everyone’s favorite, but…

Roasted Plum BBQ Falafel Bowls
I really hope you’re not getting tired of bowl-style food you guys because I just love it. So I guess most people’s first thoughts at the sight of some crates full of plums wouldn’t be barbecue sauce, but you know, I’m weird like that. Yes, that’s the idea that came to me when some of our close friends shared some of the abundance from the plum trees around their home. I thought I’d just see how many were left after spending a good part of one rainy afternoon washing, cutting, and freezing tons ofย them. It just wasn’t enough though, there were still plenty more to work with so a vat of sauce was…

Kimchi Fried Rice (Vegan+GF)
So tell me, how do you feel about spicy food? Because, well, this stuff is packing some serious heat…. Personally, I have to be in the mood for spicy food to really enjoy it. To me it seems like there are different types of spice and I like some more than others. For example, I love things like horseradish and wasabi with their powerful punch that’s pretty much guaranteed to clear your sinuses in an oddly pleasant burn. Then there are the spicy foods that numb your taste buds with blazing fire (I’m sorry, was this food seasoned with moltenย lava!!!). I’m not sure if that makes sense or not but I’m just going…
