Peanut Butter Banana Protein Pancakes
Hey guys, anyone want pancakes for breakfast? Or lunch, or dinner, or even (my favorite) pancakes for dessert! I’m the type of person who doesn’t discriminate foods based on what mealtime category they fall into. I’ll mix and match what I like and eat any kind of food anytime of day. In fact, as I’m typing out this post I’m thinking about how good veggies sound for breakfast so I’ll probably go for something savory this morning. But pancakes, now pancakes are definitely a great example of a food that works well anytime of the day. Also, I know I know I’ve emphasized my peanut butter affair over and over, but…

Quick & Easy Go-to Snacks I Love (Vegan)
What I wanna know is who needs some weekend snack-spiration my friends? Because, I’m bringing it today! If you caught my last post you’ll know I’ve been moving this week. Guys, moving can be really stressful (and I should know since I’ve done it about a zillion times over the past few years), and sometimes you need faster options for food. It’s not just moving that get’s hectic though, I mean life can be crazy for so many reasons. Anything from school season, traveling, busy workweeks, or just everyday life, can have you needing a quick bite and making poor choices. I’m showing you a few ideas today to keep in mind next…

Raspberry Pomegranate Overnight Oats (Vegan+GF)
Okay guys, I think I found a new favorite way to eat oats. Before I get to the recipe though, how was your weekend? Did you do anything really fun or make any funny memories. Even if you just spent it with people you love it would be a good weekend in my opinion. So my weekend was great but the saddest thing happened. My camera’s SD card was apparently cracked without my knowledge and when I tried to pull it out of my laptop it jammed and a side piece of plastic it broke off inside. The bad news is that pulling it out pretty much destroyed my laptops SD card reader…

Chocolate Peanut Butter Easter Egg Cake Truffles (Vegan)
Hey again, I’m here to (surprise, surprise) tell you about something chocolate! Okay, I know I should be sharing something a little bit more balanced to help inspire you to start your week off right, but……. well chocolate. Did you catch that part? Oh, and there’s peanut butter too! Since the very first months of blogging until now I’ve always wanted to be super organized and planned with my recipes but with the craziness of life things don’t always pan out as I plan. So anyway, I found myself trying to brainstorm some last-minute recipes recently and of course I had Easter on my mind since it’s getting very close. Less than a…

Carrot Cake Baked Doughnuts with Maple Coconut Icing (Vegan)
Hey! Happy Friday! I have to say that this just might be one of the first weeks ever that Friday got here this fast and, while I’m super excited that it’s the weekend, I almost wish I had another few weekdays. Obviously it’s because I haven’t been able to post much in a while, but still. Should there be concern about my mental health just for thinking like this? Also, I’m extremely torn about the season changing here. Between my recent traveling in warmer (and then colder) areas and being sick for what seemed like forever, it’s as if I haven’t had the chance to catch up with the fact that summer is…

The Best Fried Mozzarella Cheese Sticks (Vegan)
They’re melty, they’re crispy, they’re hot, and oh man are they CHEESY! Yes, I made some all-time classic snacks to share today, mozzarella sticks, baby! Mozzarella sticks are such a major crowd pleaser, it’s ridicuolous. Really, I can never believe how quickly they get devoured by my family, particularly the dudes, but actually everyone loves them. They’re essentially just a different form of pizza, right? Game-changers, that’s what these are. <-True stuff. That’s why I was so surprised the first time I tried making them with a dairy free alternative. I honestly didn’t think that it would work but they went over so well that no one could tell the difference. So…

Sea Salt & Olive Oil Dark Chocolate Brownies (Vegan+GF)
Yeah…….okay I did put olive oil in your brownies. Can we still be friends? And wait just a second before you completely write me off as insane please, they’re actually really good! Seriously, no one could ever tell there is olive oil in them if you don’t tell. They’ve got it all; that rich fudgy texture, a perfect amount of sweetness, and that bittersweet balance with them being extra dark. Oh, and don’t let me forget the sea salt on top, that’s the magic touch that takes them to a whole other level of delish! However if salty/sweet isn’t really your thing then feel free to cut back or even skip it if…
