Meatless Tri-Color Quinoa Chili (V+GF)
It’s been a long time since I’ve made chili and I’m not sure what possessed me to make it on one of the hottest days of the year. Has it been hot where you live? I typically don’t have reason to complain about the temperature because it stays pretty mild but this past week has just felt so hot to me. So yeah, it’s random that I decided to make chili right now when it’s so clearly not the weather for it. But I made it anyway and that’s the point here because it turned out really good. To me, chili is one of those meals that are like “go big or go…

Creamy Quinoa Fiesta Taco Soup (Vegan+GF)
How about a taco Thursday? So my taco Tuesdays sort of got a little side-lined during my traveling but that doesn’t mean we can’t still go Mexican today, right? So my sister and I were in Southern California for over 4 days and we just barely managed to eat Mexican food once. Okay, I know, I know, Mexican food is the thing there. People come from all over the world and know that it’s the place to get the authentic stuff. It’s just that ironically, out of a huge family that all love Mexican food, my sister and probably like it the least. For her it’s that she doesn’t enjoy spicy food much,…

Chunky Chili Stuffed Sweet Potatoes (Vegan+GF)
I have an exciting recipe to share with you today guys. I mean, I know it’s pretty classic but personally I tend to go through food moods or get into dinner ruts sometimes and I forget about old favorite dinner recipes from the past. That’s why I thought I’d share this anyway. Before I get into that; some totally random things about me recently. I rarely have super vivid dreams these days but if I do it’s only when I wake up ridiculously early and then manage to go back to sleep (which that is something I usually can’t do). Anyway, I had this really strange morning dream yesterday where a zombie apocalypse was taking…

Creamy Roasted Chestnut Potato Soup (Vegan+GF)
Can I just say that dealing with chestnuts is not exactly the most fun task in the world, which I’m sure any of you who’ve done it would agree with me. They’re just sort of high maintenance compared to what you get from them. However, I really like using them and I’ve gotta say I’ve dealt with much worse ingredients in my food blogging past so it’s not too bad to mess with them a few times a year. Plus, you all know how much I love to get into themes and stuff, and come on, chestnuts and Christmastime go together like pb&j! Am I right? Am I right???? Before I get into…

Thai Cashew Stir-Fry & Lemongrass Infused Brown Rice
I think I might be obsessed with Thai food you guys…….. Like, if I just found out I only had a few days to live I’d probably make eating some Thai one of my top priorities. Have you ever thought about that, by the way? What would you eat if nothing else mattered and it was all about what you actually love to eat. If you could take away every other factor (nutrition, expense, calories, availability, etc…….), if none of those things existed what would you eat just because you genuinely love the taste? I find it hard to decide what I personally favor and you probably do too, becuase all of those…

Tex Mex Chili & Cilantro Cornbread Bowls
Baby, it’s cold outside and I need to make something cozy! The past few days here have been getting pretty darn chilly, to say the least, and there’s nothing more comforting on a cold day then having a nice hot meal. As a result of the cold rainy/snowy weather, it has inspired me to come up with a new cozy recipe. I think meals like this are also great to have in mind during the holiday season as well. You know, when you can’t stomach another plate of mashed potatoes and stuffing (I honestly can’t imagine ever getting tired of that but maybe you do, lol). Regardless, it’s good to have a nice…

Loaded Sweet Potato Chili Cheese Fries (Vegan+GF)
Okay, major confession time…… I’ve never made sweet potato fries before. Don’t judge, it’s just that most of the french fry lovers in my family claim to hate sweet potatoes so I’ve always felt it would be a pointless venture. But now there will be no going back. I’ve opened the door to homemade french frying and everyone knows that they can be done. Fact: there will be more fries happening, a lot of em, and very soon. I think that if regular potato fries went up against sweet potato fries in a competition to see which tastes better chili-cheesified, the latter would win hands down every time. Sorry regular tatos, we’ll still…
