Simple Sweet Potato Veggie Burgers (Vegan+GF)
There are nights when you crave a cozy soup……and then there are times when you just need a burger! I’ve really been into simplifying things recently. I mean, life is complicated enough without adding to it, you know? These veggie burgers definitely fit the bill because they’re about as basic as it gets. They’re great for making ahead for the week as well. I remember the first time I heard of a veggie burger as a kid and the first thing I thought of was a regular burger piled with vegetables. When I found out that you could make burgers out of things like squash, beans, and other vegetables I was super intrigued…

Fudgy Sweet Potato “Nutella” Brownies (V+GF)
Is there a more perfect treat than brownies? I don’t think so. Of course, I’m super indecisive so if I had to choose between brownies and, say, chocolate chip cookies or ice cream, I’d probably fail. So I made homemade nutella recently and omg, yum! When you’re a recipe creator though, sometimes you end up with a lot of extras from testing and that’s what happened here. In these cases my philosophy is always to make lemonade out of lemons. Also, I’m contemplating how I have ever lived without a blender. I mean, obviously brownies aren’t the most essential thing to life (Haha, depending on who you ask 😉 ). It’s just, I think…

Sweet Potato & Avocado Sushi Rolls (Vegan+GF)
So taco Tuesdays are great and all but what if we made sushi Tuesdays a thing? I personally think it’s a pretty great idea, especially during the Summer. I’ve gotten a little bit spoiled by where I live right now. We’re so used to having mild, comfortable weather this time of year but the last few days have been pretty hot. On top of that there have been some challenges with our AC not working and that’s no fun. Yeah, so I’ve been trying to think of some no cook meals to prevent the house from being too hot and sushi is perfect. Now obviously the rice has to be cooked which…

Farro Salad + Pickled Beet & Almond Butter Dressing (Vegan+GF)
Okay, okay, so I might have basically already lost you at the title of this recipe. What can I say? I just prefer upfront honesty. So I seriously considered only sharing the dressing for this recipe and letting the salad be the “serving suggestion” because that’s pretty much all it is. Here’s what happened. -> I was craving a big bowl of greenness, and if you can’t possibly fathom how someone could for reals be that excited about salad, that’s okay we can still be friends ;). Anyway, what ended up in the bowl was totally by chance based on what I had that day. This dressing though, it’s life-changing! Fine, so…

Deconstructed Veggie Roll Sushi Bowls
I’m pretty excited to share this one cuz, day-YUM, it was so good! So in my house it’s really easy to make everyone happy with bowl-style meals. You can get really creative and versatile with all of the ingredients and it keeps really easy too. For me, I especially love rice bowls. Actually, I really just love any kind of grain based bowls. In fact, I realized recently that I rarely eat bread, or any form of wheat for that matter. It’s not because of a gluten allergy or anything, I just always prefer other forms of carbs. Like sweet potatoes! When I’m traveling I love getting sushi whenever I can. This…

Sweet Potato Toast 4 Ways
This new snack obsession is unreal you guys! I say snack, but it can absolutely be a meal too, especially on those occasions when you can’t decide between sweet or savory. Basically I just can’t believe I’ve never tried this before, but sweet potato toast is definitely going to be a lasting favorite from now on, that’s for sure. Oh, speaking of favorites, we had the most amazing lightning/thunderstorm last night and I was just loving it. If you’re the type of person that really doesn’t like storms and that sounds crazy to you, no worries, I totally get it. For me personally though, I grew up in a place that had…

Easy Cinnamon Sweet Potato Quick Bread
So I realize this post is coming at you way out of season. I’d blame it on all that time I spent living in the Southern Hem where the seasons are all switched up, but the truth is we recently got this ginormous bag of sweet potatoes and only about half of the people in my house like them. Even then, some of my family members that do like them still seem to think of them as an item reserved for eating at holidays only so that leaves only a few people to eat them. I have no problem having them all to myself basically, and this totally wouldn’t be a problem…
