Granola Crusted Cashew Cream Tart (Vegan+GF)
It’s been a little while since I’ve shared a tart like this. I was going for a cheesecake type of thing and, while this doesn’t taste exactly like cheesecake I think it’s definitely delicious! I wanted to keep it simple and not bother turning on the oven since it’s been pretty warm. Anyway, I recently made this huge batch of chocolate granola. Easy Vanilla Cream Custard Berry Tarts (Vegan)
It’s Pi Day tomorrow, so naturally there has to be pie right? Right. Glad we’re all on the same page here. So based on our local weather forecast, I’m thinking we’re done with snow around here. A month ago I might have been sad to see Winter go because I’ve missed having a white Winter season for so many years, but in case you haven’t noticed, I’m basically over Winter and totally ready for Spring. On the flip side, you can’t really write too far ahead without seeming detached and…

Almond and Stone Fruit Tart (Vegan)
Okay, let’s talk about some awesome things. This tart makes me pretty happy. It’s fast and really simple, my favorite kind of recipe when I’ve had a long week. I think the crust is the best part. It’s somewhere between a shortbread and sugar cookie and goes perfectly with the cream layer and the fruit. Yep, it’s really good, although I really like the almond with this too. I’m pretty sure this would fit in anytime of year but it was great on a late summer day to get in the mood for the fall here. It’s summer fruit but the tart is like pie and reminds me of apple pie and that…
