    Indian Red Lentil Dahl (Vegan+GF)

    April 21, 2020 /

I’ve got a new one today, something I’ve actually never made before. I know it’s kind of a love it or hate it type of food, but I love pretty much any Indian dish. When I was a younger my family never really liked it so I didn’t make it much. Of course, now it’s like a staple when I’m batch cooking for just me or me and my roomies. This dish is great to make ahead because it almost gets better next day. Curries are something that I make all the time but I’ve never made a dahl (also spelled dal or daal). If you’ve never tried it either you might be…

Harvest Time Apple & Pumpkin Chili (Vegan+GF)

    September 25, 2018 /

Please tell me you’re week needs some delicious comfort right about now because, if so, this is exactly what you need! How do you feel about chili? To me it always seems like chili is one of those meals that doesn’t get appreciated enough. I don’t get it, it’s so homey and chock full of flavors, oh, and you can load it with so many good things like guacamole and eat it with cornbread, YUM!. Plus, it’s versatile and you can do so many things with it (Hello chili-cheese fries!), what’s not to love? I have to tell you, even within my own family chili isn’t the most popular. I mean, everyone will…

    Indian Chana Masala Curry (Vegan+GF)

    August 15, 2018 /

Hey again, I hope you’re having an awesome morning, noon, or night wherever you are right now. Where I am it’s been super hot and dry so there are a lot of wildfires raging over a very large area of States. In fact, I just saw that there is a huge fire at Glacier National Park where me and my sister were just last week. Not only that, but they’ve evacuated a lot of it including the Lake McDonald Lodge where we had walked around. They’ve also closed off 30 miles of the Going to the Sun Road. It’s super sad to see so much devastation and I know it’s going to hurt…

    Italian Broccoli Marinara Pasta Salad

    June 13, 2018 /

I’m gonna be honest, I really wasn’t sure what to call this. So I was walking through the produce section at the grocery a few days ago and passed the basil and then the pestos and got hit with the most random craving for something Italian with red sauce hit me. Oh, and I got some pine nuts too, those were a huge part of the inspiration. I think the main takeaway that we can all get from this story is that you should never shop hungry. Hey, but I’m so happy about it on just this one occasion because it ended in me finding a new favorite pasta salad-ish thing. Basically, I…

Indian Yellow Masala Chickpea Curry (Vegan+GF)

    May 8, 2018 /

This is so exciting!   You’re probably like “Curry isn’t THAT exciting, chill.” Well, I am excited about this recipe but what I’m talking about its being excited because I’m just hours from leaving for my next trip. I’ll be headed to Victoria B.C. in a matter of hours. I can’t wait! But anyway, I’ve got recipe to share and because I’m in a little bit of a hurry I thought I’d keep this post fairly short. I know I’ve probably told you this along with every curry recipe I’ve ever shared, but it’s not my family’s thing. Which is a shame because I adore any kind of curry. Well, that’s the beauty of…

    April 25, 2018 /

Who else is excited about this Summer?   I’m already feeling the need to switch out the wardrobe from jackets and boots so I can dig out all the shorts and flip-flops. Maybe this is just me, but there’s just something so liberating about not having to layer up to walk outside. It’s like more of the world opens up during the warmer seasons. I love it.   Also, it sounds like my family is going to be having lots of visitors through the Summer. We’ve got plans with both old and new friends so it’s going to be a really busy season of barbecues, picnics, and sports. Oh, and there’s only a…

I’m so glad to be feeling more myself after being sick all weekend.   Can we all agree on the fact that being sick just sucks on every level? Especially when you’re older because then you don’t even get to miss school as a bonus. You just get to lay around feeling guilty that you’re not doing all the things you need to. Then on top of that, I work from home, so it’s hard to not feel extra guilty when you’re work is right there. I’m not saying that there aren’t huge benefits to working from home, but it’s not all sunshine and rainbows.   This flu virus though, or whatever it was,…
