Chipotle Inspired Sofritas Burrito Bowls (Vegan+GF)

    January 8, 2019

I’m feeling some serious taco Tuesday vibes today, what do you think? Wow, it feels like it’s been ages since I’ve added a fresh recipe to the blog. Oh yeah, it has! This whole deal with moving a website has been way more than I bargained for if I’m being honest. I’m happy to say that I’m nearly done sorting everything out but I was just dying to share a recipe today. I mean, I haven’t added a new one all year! These bowls are a nod to the popular restaurant chain’s menu item, sofritas. I’d never actually tried this, much less made it, until this past Summer. My cousin…

    Fully Loaded Vegan Nachos (GF)

    August 22, 2018

You know what time it is? Nacho! I’m really tempted to throw in a Nacho Libre meme here but I don’t think I will. Tell me, do you agree that memes were a whole lot funnier before the internet was so entirely saturated with them? I don’t know, I just think less is more sometimes. So do you remember that “cheese” sauce I made a while back? Well, my teenage brother has been almost begging me to make it again recently so I thought I’d make a batch. That’s when I had the idea to make something with it and nachos seemed like the best idea ever. Now here’s…

    Scrambled Tofu Breakfast Burritos (Vegan)

    April 11, 2018

It’s just another normal day of the week but today there are burritos involved! I realize that I haven’t done a taco tuesday in a while. I guess they sort of fell off the radar a little bit between traveling, family stuff, keeping up with blogging, and just the general busyness of life. I’ve just had other recipes on my list that were higher priority, you know? I’m sure you can understand because that seems to be the case for everyone these days. Apparently the future’s not slowing down. Mexican food is a really big favorite for everyone in the gang and I haven’t made burritos in a long time…

Chili Lime Veggie Burrito Bowls (Vegan+GF)

    March 6, 2018

Hey my lovelies! You know those times when you can’t decide what carb to focus your meal on? Happens to me all the time. I mean, there are just so many meals that go so well with many different carbs. Like meatballs in marinara, do you make subs or do spaghetti? Or like when you go for Chinese, are you a rice or a noodle type? Ah, and then there’s always the dilemma with Mexican food, burritos? nachos? tacos? quesadilla? Personally I always like the bowl style Mexican food, so rice. I hope you’re into that also because this taco Tuesday is gonna be bowl-style! Okay, so here’s the game…

    February 22, 2018

How about a taco Thursday? So my taco Tuesdays sort of got a little side-lined during my traveling but that doesn’t mean we can’t still go Mexican today, right? So my sister and I were in Southern California for over 4 days and we just barely managed to eat Mexican food once. Okay, I know, I know, Mexican food is the thing there. People come from all over the world and know that it’s the place to get the authentic stuff. It’s just that ironically, out of a huge family that all love Mexican food, my sister and probably like it the least. For her it’s that she doesn’t enjoy…

    January 16, 2018

It’s Taco Tuesday peeps!   The cool thing is that this recipe could also double as a meatless Monday meal too! Yeah, I think it’s about time for another taco recipe around here. Considering how big on tacos my family is it’s pretty crazy that I haven’t made them very often recently. I’m planning to make up for it by doing tacos at least once every other week and hopefully even sharing a new version with you guys each time. So technically I might have made these on a Thursday, photographed them on a Friday, and written this post on a Sunday but you guys are getting them on Tuesday…

Happy Taco Friday! -> I know that’s not exactly a thing but it should be a thing. Actually, scratch that. Honestly, I mean don’t you think the very notion of confining tacos to a single day is preposterous?? I certainly do. Here’s to taco freedom for the world! Who’s with me? On a quick side note (feel free to skip over this), has everyone seen Beauty and the Beast already except me? I’ve been so excited to see it since I first found out about it and I was going to go with some of my family but then some things came up. My parents and some of my sibs needed…

  • So it's no secret that the saddest day of the year is December 26th. I know, I'm totally ruining the magic of the season by thinking about it already. Here's the thing, I've decided that maybe if I start anticipating the day ahead of time I can try to make it a little less sad.

These sweet crumbly muffins, I feel like they’re just the answer you need for all that nog you’re probably gonna have leftover in your fridge. I'm obviously referring to almond nog for me but whatever kind you've got will work here. (Did you know they make so many kinds these day? Coconut, soy, almond....) I mean, if you share any of my enthusiasm for the holidays then maybe you’ll understand when I say how downright depressing it is for me to have anything like that around more than a few days after the season ends. Well, and if you aren’t a fan of nog in the first place then maybe you can at least try to imagine feeling that way. Like I said, it’s depressing.

  • The 12 day countdown is here! My goodness is the season flying by. At least the season has been everything I love this year. Our snow arrived just on time to ensure we'll at least have some white on Christmas day. Also, I've been listening to Christmas playlists on repeat. Oh, and I've been loving the local lights and decor. The CDA resort puts up a stunning display every year that draws people from all over and the surrounding businesses are getting all festive as well. I've been down to the resort twice already. 😍✨ Over the next week and a half the streets and stores will be filled with last-minute shoppers trying to finish their lists. If you're anything like me you at least have a bunch of wrapping to finish (I definitely do right now). Anyway, I just wanted to say that I hope you're having an amazing season. Don't forget to enjoy as many moments of it as you can and step back from all the chaos to just be with friends and family.

  • The decade is almost over guys!

I know everyone’s posting retrospective photos, talking about goals for the next decade, and basically just wondering how it passed so quickly. Me? I’m honestly not too concerned about it. I mean, it’s exciting to be starting a new global chapter for sure. I guess I’m just not so into focusing on new year’s (or in this case new decade’s) resolutions as if that’s the only time to make big life decisions. I sort of prefer to make them on a daily basis.

Besides, I’ve never been the greatest at sticking to arbitrary resolutions set out of obligation. I think if something matters to you you’ll stick with it and go for it regardless of how long it takes you to get there or if it’s written on some list. Life has a way of happening how it wants to anyway, so planning it so intently is kind of pointless.

I'm just so excited we've finally got some snow on the ground. It's a winter wonderland outside. ❄️😍🌨️
  • So there’s a time and a place for all things pumpkin this time of year, but if I’m being honest I prefer using sweet potatoes in baking and cooking. It’s a little but sweeter, it’s much easier to prepare from scratch, and it adds amazing texture to your baked goods.

I had a bunch of leftover sweet potatoes after Thanksgiving was over this year so, me being me, that meant baking time. If you’ve never tried a sweet potato bread before, honey, you are missing out. I love adding pecans as well but it you prefer to keep it simple they’re optional. The brown sugar glaze is a must though. It’s not you’re typical icing but it’s simple and it compliments this bread really well.

  • So it's almost mid-December my friends, holy jingle bells, how did that happen?!?! If you haven't gotten into the kitchen to make something festive yet, what are you doing with your life? I mean, it's Christmas cookie crunch-time, people!!! I love making the traditional simple things like sugar cookies and fudge, but I also like to make some fancier things too. Obviously gingerbread houses are a must and then these homemade caramels are something I like to make during the season as well. They're require a little more patience but they're a crowd favorite and make a perfect handmade gift.

  • Comfort food time! So when I was growing up my family's Christmas Eve tradition was always to get together with grandparents and cousins and have chili for dinner. It sort of changed at some point as me and my siblings got older which is really sad. However, I still find myself thinking of chili as a perfect holiday season meal.
My favorite variation of chili is one my mom used to make with a little bit of Mexican flair. I sort of switched things up from her recipe (sorry mom but I left out the chicken 😜). It's amazing with some homemade cornbread and lots of cilantro of course.

  • Okay, so I haven't even started my Christmas shopping and the countdown to Christmas is ticking away. Yikes! Please tell me I'm not the only busy person that isn't on top of things this season.

When it comes down to those really difficult to buy for people, I sometimes prefer to make gifts myself. Even if a store-bought gift might be more convenient and cheaper, a handmade creation is always going to have way more gift value. Besides, when you take the time to make gifts you have the ability to tailor them specifically to the friends and loved ones in your life.

Anyway, these hot cocoa mixes are not really a new idea, they've been done a billion times. I was just hoping these flavor combinations might inspire you to think outside the box and create even more unique cocoa mixes. These are thoughtful, fairly inexpensive, and not to mention super aesthetic!

  • For some reason I find it so much less fun to post savory things during the month of December. Oh yeah, that's because all I want to do is share Christmas cookies! Of course that's not very practical so here's something savory.

So traditional Mexican tacos are always delicious, but if you're ever in the mood for some fusion these Asian inspired tacos are a fun way to change things up!
