Oaty Pumpkin Pancakes + Maple Nut Butter Spread (Vegan+GF)

    October 6, 2018

I’ve been really loving oats lately. During the Summer I felt like I could eat allllllll the fruit but the moment the weather shifted all I’ve wanted are warm foods. Now plain old oats can seem really boring to some people, and that’s okay. However, if you want to get the best of both worlds by eating your healthy oats and doing it in a way you love, make oatmeal pancakes! OOoooh, and add pumpkin and spice and everything nice! (Did I take that too far? yeah probably.) Not only do these have all the benefits of whole grains but they’ve also got some sneaky fruits and veggies from the…

    Chocolate Oat Pancakes (V+GF)

    August 3, 2018

Pancakes are something I really don’t make often enough. In my family there is a near even split of those who love waffles and those who prefer pancakes. Personally, I’m too indecisive to choose between them because I love both. Another thing I find funny is that it’s the boys in my fam who like waffles and the girls who like pancakes. I’d love to know if this trend is the same in your house. Maybe you can take a little poll and let me know. So I was in the mood to make some pancakes, but not just plain ones. Although, I wanted them simple and of course you…

    Carrot Cake Baked Oats (Vegan+GF)

    August 1, 2018

Happy….whatever day it is for you right now! It’s another day and another recipe. So you know that really sad feeling that you get when you finish a show that you’ve been secretly obsessed with? Yeah, I’m totally dealing with that right now. Big teary eyed emoji face inserted here. It’s such a sad thing because you can never imagine loving another show the same way as this one. It’s kind of like the day after Christmas when you realize it’s going to be a whole year before it comes again. But we get over it quickly as soon as another show comes along to take over our fancy. I…

Almond Vanilla Baked Oatmeal Breakfast Bars (Vegan+GF)

    June 18, 2018

Breakfast time, everybody up.   Yes, I’m sharing another oats recipe, but I promise it’s not boring. So I went through this phase a while back where I was so into baked oats. Literally, I’d eat it for breakfast every single morning. Needless to say, after that much repetition I did get tired of it after a while but recently I’ve been craving it again. I also remembered that I’ve got some really ancient recipes that need updating and these almond vanilla bars came to mind. I called them “bars” for lack of a better word, but honestly it’s definitely closer to baked oats and you just cut it into bars.…

Simple Nuts & Seeds Muesli Cereal

    June 15, 2018

I found a new favorite thing guys! Do I say that a lot? I think I say that a lot. You’ve probably at least heard me obsess about granola right? Well, muesli is basically the close cousin of granola but it’s just a little different.   The first time I heard of museli I just didn’t get it. I know for sure I didn’t even know how to say it right and I couldn’t figure out the difference between it and granola. So whats really cool about muesli is that it’s even simpler to make than granola. Granola is actually really easy so that’s saying a lot. With muesli you…

    Peanut Butter & Banana Oatmeal

    January 21, 2018

Oh, sweet Sunday, thank you for being here again. Time for some planning and resetting for the new week and just chilling. I hope you’re off to a pleasant day and getting caught up as well. This past weekend was fairly busy for me because we did some entertaining for me which go me in the kitchen more than what’s been usual recently. Lots and lots of cooking (and dishes) but I must say I enjoyed it all because it’s been a while since I’ve cooked for so many and it used to be a normal part of my week. Here’s the recipe for this really easy pb banana…

Homemade Oatmeal Cream Pie Cookie Sandwiches (Vegan)

    February 26, 2015

Because it’s Monday and it’s potentially going to be a long week. I don’t think anyone can argue that cookies are a must today, or that a classic like oatmeal cream pies is even better! I just realized as I am writing this post that I am starting this week without chocolate. What? That is something that must be amended later I’m sure. Don’t worry, I’ll make up for it. So, in light of these facts I am going to keep today’s post short and sweet because I have a bunch of things to do today. Hopefully you guys don’t mind. I’m pretty sure you’re only here for the food…

  • It's official, the true cold weather has arrived and I'm not exactly thrilled about it. 🥶🥶🥶🥶 I keep thinking that if we had snow on the ground it would make it seem a little more worth it. Although, then I remember that I have to drive in it and I'm totally content to wait a few more days to get our inevitable blanket of white.
Basically, all I wanna do is snuggle up in a blanket and eat cozy comfort food while watching cheesy Hallmark movies. Oats have been a huge go-to. What's your favorite cold weather breakfast? 🥣☕🥞🥯🍠🥑🍎🍌 Btw, recipe for these PB banana oats on the blog
  • It's December my friends, crazy right? I'm still trying to figure out how the year can pass so quickly but I'm also so excited that the most wonderful month of the year is here.
The downtown area where I live just came alive with sparkling Christmas lights everywhere you look. Oh, and I think my neighbors are all trying to outdo each other on decorating their homes. It's very entertaining to say the least.

I know I've shared a lot of sweet stuff lately but it is the holidays. I'll be baking these this week because their a family favorite and a traditional treat I make every year.

  • I have to ask, can you think of anything that’s more fun than mini-sized foods, ’cause I’m having a hard time coming up with one right now? These are an absolute must-make you guys! The kids were flipping out over the fact that I made baby cinnamon rolls and they disappeared super fast. I think my brother’s are still investigating who took the last one. Since I think it was one of them they get kudos for faking innocence pretty well.

So you are going to try these right? You’ll be everyone’s bff if you do because these are a major crowd-pleaser!

  • In my opinion cookies are best right out of the oven every time. The problem with that is that the chewiest cookie recipes are far too soft to hold when they are warm.

The answer to this terrible life problem is to make your cookies deep dish in a big skillet or in a bunch of small ones. Then you have to top it all off with some ice cream and you have a dream dessert that is guaranteed satisfy even the most voracious sweet out there.

  • HAPPY THANKSGIVING!!! It's here guys, how did that happen? I hope you're planning to spend the day with loved ones and not stressing the small stuff. If you're someone who obsesses over making everything perfect (I'm so very guilty of this), just remember, they probably won't remember how perfect the meal was. What everyone remembers is the time spent together and the joy of the season.
My favorite tradition from my childhood is watching Miracle on 34th Street while we start prepping things for the feast. Then we move on to the parade and talk about how it's never as good as it used to be when we were little. Although, I can't help but wonder if that's because I'm just getting older and the balloons don't hold the same appeal. 😜

This year I did most of the prep the day before so I could sit and enjoy my morning coffee because # adultingpriorities
What's your favorite tradition on Thanksgiving?
  • Can I just say that dealing with chestnuts is not exactly the most fun task in the world, which I’m sure any of you who’ve done it would agree with me.

They’re just sort of high maintenance compared to what you get from them. However, I really like using them and I’ve gotta say I’ve dealt with much worse ingredients in my food blogging past so it’s not too bad to mess with them a few times a year. Plus, you all know how much I love to get into themes and stuff, and come on, chestnuts and Christmastime go together like pb&j! Am I right? Am I right???? Okay, but aside from the chestnuts, this soup is a breeze to make and it has so many of the flavors that I love about the holiday season. I really wanted to get the chestnut flavor in there so I added quite a bit.

  • Baby it's cold outside 🎵🎶 Seriously though, it's really cold and I'm not feeling motivated at all to get out of the warm indoors.

Good thing it's a holiday week so there's all the festivities to look forward to. What are your plans for Thanksgiving? I'll be helping with a lot of the food prep of course, and then I've got a non-negotiable date with a fireplace, some Christmas movies, and something got to drink. 😋🔥☕🎄
  • Can you believe it's the week of Thanksgiving already??? I'm trying to figure out what happened to my whole year. I'm planning out what I'll be making for my family's dinner this year. Typically I'm mostly on desserts and helping with all the extra little things. Oh, and the veggie tray of course because I'm the weird one in the family who actually loves their veggies. Lol ;P I love that it's the one day of the year when almost everyone in the fam works together to all bring something delicious to the table. I'm thinking these cookies might be a nice addition.

I can’t understand is how some people don’t like dark chocolate. I mean, that’s just messed up. These cookies are a celebration of dark chocolatey goodness and they’re really pretty easy to make. Are they healthy? Haha, not really but it's the holiday season and time to enjoy a few treats.
