Vanilla Oat Flour Protein Crepes + Berries (Vegan+GF)
Good morning, my lovelies! The season is starting to get to that tipping point of permanently crisp air, rainy days, and bare trees and I’m starting to get excited for all that the holiday season is going to involve this year. I’m also highly excited about next week. In case you missed it in my recent posts, I’m going to Europe for the first time in my life! Yes, so I’m looking forward to it lot but there is still a lot of planning I have to do and things I want to get done before so making time to enjoy something filling and delicious is a priority to keep me going. These…

Pumpkin Spice Latte Baked Oatmeal
Hello again, my lovely friends! Wow, October is flashing by and I’ve yet to make enough pumpkin recipes to meet what I’d consider to be a bare minimum as a food blogger. My brother-in-law is so humored by the fact that everything turns pumpkin in September that he took pictures of all the pumpkin products he found on his last grocery shopping trip with my sister. He found SO many too so it’s been a family joke recently how many things marketers convert to pumpkin. Hey, I’m loving it with no complaints. (By the way, has anyone found seasonal flavors of peanut butter around North Idaho????) I guess it’s not that awesome if…

Peanut Butter Banana Protein Pancakes
Hey guys, anyone want pancakes for breakfast? Or lunch, or dinner, or even (my favorite) pancakes for dessert! I’m the type of person who doesn’t discriminate foods based on what mealtime category they fall into. I’ll mix and match what I like and eat any kind of food anytime of day. In fact, as I’m typing out this post I’m thinking about how good veggies sound for breakfast so I’ll probably go for something savory this morning. But pancakes, now pancakes are definitely a great example of a food that works well anytime of the day. Also, I know I know I’ve emphasized my peanut butter affair over and over, but…

Creamy Sweet Potato Breakfast Bowl (Vegan+GF)
Wow, September disappeared into October, how did that happen? The days are quickly getting shorter and the chill in the air seems to be here to stay so I’m cozying up my recipes and I hope that you’re as excited about this as I am. This sweet potato bowl is a current favorite of mine with all of it’s comfort-food vibes and versatility. During the summer while I was recovering from my 4-wheeler accident this became my go-to breakfast. It’s definitely not the most common morning fare but honestly it shouldn’t be all that strange considering sweet potatoes are a staple around the holiday season. Have you ever just wished you could find…

Quick & Easy Go-to Snacks I Love (Vegan)
What I wanna know is who needs some weekend snack-spiration my friends? Because, I’m bringing it today! If you caught my last post you’ll know I’ve been moving this week. Guys, moving can be really stressful (and I should know since I’ve done it about a zillion times over the past few years), and sometimes you need faster options for food. It’s not just moving that get’s hectic though, I mean life can be crazy for so many reasons. Anything from school season, traveling, busy workweeks, or just everyday life, can have you needing a quick bite and making poor choices. I’m showing you a few ideas today to keep in mind next…

Raspberry Pomegranate Overnight Oats (Vegan+GF)
Okay guys, I think I found a new favorite way to eat oats. Before I get to the recipe though, how was your weekend? Did you do anything really fun or make any funny memories. Even if you just spent it with people you love it would be a good weekend in my opinion. So my weekend was great but the saddest thing happened. My camera’s SD card was apparently cracked without my knowledge and when I tried to pull it out of my laptop it jammed and a side piece of plastic it broke off inside. The bad news is that pulling it out pretty much destroyed my laptops SD card reader…

Chocolate Coated Nuts and Seeds Granola Bars (Vegan+GF)
Well, it has definitely been a busy week so far. I’ve been planning, cooking, planning to cook, and even planning to plan. That last one doesn’t always work out with all the different variables that inevitably change whatever I may have attempted to plan but I keep trying anyway. We’ve had some birthdays, some family events, and then this weekend we’re having a gathering with a pretty large group of friends for the evening. Of course you can’t have a good party if it doesn’t involve some good food and you know I love any opportunity to make extra special things so I’m planning for that too. All of that and then we…
