Vegan Soft and Simple Coconut Cream Pancakes
Wake up and greet the day with some super fluffy coconut cream pancakes that are so quick and easy to whip up. This post is all about vegan coconut cream pancakes So in case you haven’t noticed, I make pancakes pretty often and, oh wow, can my roommates put away some pancakes. The best part of when I make pancakes is that they are always slightly different. Pancakes are so versatile and easy that you can put all kinds of stuff in them. I love using the ends of bags of miscellaneous flours and various plant-based milks. These particular pancakes were exceptional. I used one of my current obsessions, coconut cream, and…

Easy Oats & Seeds Rawnola (Vegan+GF)
I know what you’re thinking. “Is she seriously sharing another version of granola?” If you’ve been around for a while then you probably are familiar with my obsession with granola. That’s why it shouldn’t come as any surprise that I’ve found a new version to fall in love with. It’s “rawnola”, and it’s my new favorite thing. Okay, so basically it’s just crumbled up bliss balls or unbaked granola but it’s so good! It’s kind of a crossover between oatmeal and cereal. Plus, it’s way faster and easier than granola so you can have it ready in minutes. I think this is where the crowd will split because if you’re the type of person…

Smoky Portobello Veggie Burgers (Vegan+GF)
It’s long past time for some burgers. I’m writing this post from Montana where I’m camping with my sis. I say “camping” because we’re staying in a dry cabin but to me that’s pretty close to camping. We had to bring basically everything we needed aside from a shelter. That means bedding, towels, etc. We’re going to be hiking to some waterfalls tomorrow and maybe rafting down the river. I’m so excited to share it all but for now I’m sharing a recent recipe while I continue gathering good content from this trip. So did you know you could turn a plain old mushroom into something nearly unrecognizable? And before anyone starts…

Fudgy Sweet Potato “Nutella” Brownies (V+GF)
Is there a more perfect treat than brownies? I don’t think so. Of course, I’m super indecisive so if I had to choose between brownies and, say, chocolate chip cookies or ice cream, I’d probably fail. So I made homemade nutella recently and omg, yum! When you’re a recipe creator though, sometimes you end up with a lot of extras from testing and that’s what happened here. In these cases my philosophy is always to make lemonade out of lemons. Also, I’m contemplating how I have ever lived without a blender. I mean, obviously brownies aren’t the most essential thing to life (Haha, depending on who you ask 😉 ). It’s just, I think…

Energizing Ginger Berry Maca Smoothie (Vegan+GF)
It’s been a minute since I’ve shared a smoothie recipe. I guess it’s because they are such a common thing in my house that I think of them as sort of mundane. While I don’t have a smoothie every single day, I do usually end up making one everyday for others in my family. Of course, those are usually very basic with mostly fruits. This one however, is more my style of smoothie when I am in the mood. Now I don’t know if you’ve heard of this little health hack before but you have to try it. It’s cauliflower, and hold on just a second before you bale. Believe me, I…

Blueberry Lavender Protein Waffles (Vegan+GF)
Good morning, anyone care for some waffles? Before I get into the recipe, can I just say how excited I am after finding out I’m going to Eastern Europe for the first time! More specifically, Poland, and even more specific, the city of Kraków. I’m sure I’ll be making the trip count by visiting some nearby countries as well, but that part isn’t quite ironed out yet. I’ll keep you updated as my plans form and as it gets closer. Okay, so I promise I’m not obsessed with lavender, however I can’t promise the same for berries. While I was shopping recently I came across a product called blueberry lavender almond milk. It…

Korean Edamame & Jicama Stir-Fry (Vegan+GF)
I’ve been trying to branch out beyond my comfort zone when it comes to the produce section. There are all kinds of plants that I’ve never even tasted and have know idea how to use. You’d think after so many years of working with food this often, I’d have tried everything. But nope, I definitely haven’t. That’s why I’ve sort of made myself this little challenge of buying something new (or at least something I’ve rarely used). We’ll see how long it takes me to reach my goal; being able to walk by all the fruits and veggies be familiar with it all. Jicama isn’t the most common veggie out there. In…
