Holiday Cookie Week #1: Snowy Butterball Cookies
So last week I did gift ideas, but this week it’s cookie time peoples! Which conveniently, cookies also make wonderful gifts too so it’s basically a win win situation all the way around. I’m starting off with one of the classics. These devious little puffs of deliciousness operate under multiple aliases but my crazy clan has always called them butterballs. You may know them as snowballs, Mexican wedding cookies, Russian tea cakes, or Italian wedding cookies, but me, I can’t seem to call them anything else. To me they’ll always be butterballs. Okay, obviously everybody and their great-aunt Ruth has a recipe for these cookies but I just really felt like I should have…

Pecan Streusel Sweet Potato Spice Muffins
I’m kind of freaking out again…. It’s just, I woke up and realized we’re about to start the last month of the year and I’m caught in the storm of emotions that I think is familiar to most of you. I’m really excited (you don’t even know) about the holiday festivities but also a little tiny bit sad that time is speeding by so fast. Maybe that sounds crazy, but hopefully you can understand. Anyway, it’s my nephew’s first Christmas. I think I already mentioned recently but that’s a huge part of why I really want this holiday season to be special for my sister (for my nephew too, but he won’t be…

Cocoa Peanut Mole Jackfruit & Cilantro Orange Rice (Vegan+GF)
Hey, great news is that the days have been consistently getting brighter, longer, and warmer. Yay, Spring is a commin! You are probably hoping I get to the food soon and not jabber all day so here it is. Mole is the topic I’m supposed to be typing about. Okay, and it’s pronounced (mo-lay) not (mol) like the underground mammals that destroy your lawn or the ugly growth on someones face that you try so unsuccessfully not to stare at. Mo-LAY, got it? Okay cool. So I don’t get credit for thinking up this one. Actually, this recipe is one of the things that my Mom used to make when I was growing…

Fettuccine Alfredo Primavera Pasta (Vegan+GF)
I think I have officially topped myself on easiest meals ever! Okay, I guess I should clarify that. If you were planning to hit a drive-through or pop a frozen dinner in the microwave then that is technically going to be an easier dinner. When I say easy I mean by the standard of someone who makes almost everything from scratch. I made this in under 45 minutes and it’s highly improvable! I just really wanted to make a pasta recipe that still had lots of veggies and flavor, but didn’t dirty every dish in the kitchen. You know? Granted, this still uses a handful of dishes, but I guess I just really…

Naked Carrot Cake with Coconut Cream Frosting (Vegan+GF)
Blogging this past year has made me realize a lot of things about myself that I never knew. One of which is the fact that I might be obsessed with cake. I wouldn’t have thought so but recently I’ve just wanted to bake cakes. So you know how I was talking about fads the other day? Yeah, well, the “naked” cake look is another one of those that is really in right now and I’ve been on the fence about how I feel about it. For a while I thought I’d never do a cake like that because cake decorating is basically in my blood. Both my mother and my grandmother have been…

Homemade Peanut Butter Crunch Breakfast Cereal Puffs (Vegan+GF)
So I’m writing this from my new house and even though I’m not all moved in yet, we’re working on getting things set up. Today I wanted to do a throwback recipe from something my pregnant sister was craving back when we lived in Chile. One of her cravings was really random; peanut butter Cap’n Crunch. That’s pretty random, right? I knew there was no way we were going to be able to find anything remotely close down there unless I made it. It’s hard enough just to find peanut butter there. It was clear since we moved there that there is a general dislike of peanut butter in Chile’s culture so the…

Vegan Italian Cream Cake + Cream Cheese Frosting
Take an afternoon to bake this delicate and timeless vegan Italian cream cake. Your family and friends will love you and probably won’t believe it’s vegan! Every great recipe deserves and amazing introduction right? Wrong. This post is all about the BEST Vegan Italian Cream Cake and Dairy Free Cream Cheese Frosting Well, okay this cake is absolutely incredible and it certainly deserves it’s share of talk. However, I’d say it’s reputation precedes it and therefore it doesn’t need too much explaining. On the other hand, I don’t know if I can help myself. I mean, no other cake can boast such classic Southern charm. In my family this is sort of an…
