Chocolate & Coconut Pumpkin Brownies
It’s been a while since I shared a brownie recipe hasn’t it? Well, it’s time to change that for sure. I was scrolling through some of my really old recipes the other day and realizing that I’ve never made a completely vegan brownie. I’ve tried tons of variations but I don’t think I’ve ever taken on the challenge of creating a good one before. For these I used some pumpkin for texture and to help keep them on the healthier side of things. I know, you’re probably like “How could you defile a perfectly good browine with veggies!” :O Honestly though, these might surprise you by how good they are without a ton…

Pumpkin Spice Latte Baked Oatmeal
Hello again, my lovely friends! Wow, October is flashing by and I’ve yet to make enough pumpkin recipes to meet what I’d consider to be a bare minimum as a food blogger. My brother-in-law is so humored by the fact that everything turns pumpkin in September that he took pictures of all the pumpkin products he found on his last grocery shopping trip with my sister. He found SO many too so it’s been a family joke recently how many things marketers convert to pumpkin. Hey, I’m loving it with no complaints. (By the way, has anyone found seasonal flavors of peanut butter around North Idaho????) I guess it’s not that awesome if…

Golden Vanilla Cake + Chocolate Buttercream Frosting (Vegan)
Firstly, someone drank my entire cup of coffee, like what???? Secondly, please do not ask me who’s birthday it is/was. Seriously, you’d think my family would have figured out by now that I sometimes get the random urge to make an unnecessarily large, lovely, and delicious cake for absolutely no good reason at all. Yes, well apparently they haven’t because I think I got asked why I was making this cake about two dozen times by various people the day that I was working on it. So I actually did have a good reason to make it though, I felt it was a huge gap missing from my recipe list. I realized the other day that…

Pumpkin Pie French Toast & Kahlúa Vanilla Syrup (Vegan+GF)
Hey again, how were your weekends guys? Mine was pretty busy, but in a good way. Lots of cooking, obviously, because I don’t know what to do with myself otherwise. I also spent some time over this weekend doing some miscellaneous Spring cleaning things like organizing my spice cabinet. I’ve told you how they sell the spices here in these individual little pouches that are only enough to make you mad, right? It really kind of makes me crazy until I have the chance to organize like I just did. Then there was that other thing ………you know, what I mentioned Friday about my first (eh hem…….) date? Yeah, so you can probably imagine…

Mocha Pumpkin Spice Latte
Coffee makes everything better doesn’t it? It’s like a little gift to humanity to make life more bearable. When I was little, I used to think “I’ll never like that nasty black stuff my parents drink!” and yet somehow here I sit completely hooked. It’s just such a comforting habit. Okay, but we have lattes to discuss! I know there’s about a trillion and four recipes for pumpkin spice latte copycats out there and this one is probably not spectacularly different from them all. What is different is that I added a little touch of cocoa to make it extra rich. There’s always a big hype about Starbuck’s pumpkin spice latte and,…

Healthy Maple Peanut Butter Pumpkin Snack Doughnuts (Vegan+GF)
Who loves a good (healthy) snack that comes in a doughnut form??? These doughnuts are so named because they are completely acceptable (depending on who’s opinion you go by) to have as a balanced snack or for breakfast with your morning coffee. I made them with oats that I processed into flour so they’re gluten free and they are also dairy free, refined sugar free, fairly low in fat, and vegan. Can I get a pat on the back for this? Yay, for healthy doughnuts that you can have without guilt! I’ve been trying to keep those of you with diet restrictions in mind amidst all of my holiday excitement. Plus, can’t we…
