Sweet Rainier Cherry Pie (Vegan)
Who wants some pie? Just in case you missed what I just said, we’re making cherry pie! Okay, so hereโs the deal, I made this pie the other day because I couldnโt help myself. The weather finally feels like summer and I couldnโt resist the temptation to use some of the huge amounts of fruit that are in season right now. I seem to be obsessed with fruit lately. The Summer season brings a lot of people to the town where I live so the air just has an extra layer of excitement and celebration. It’s just kinda fun living in a sought after tourist destination. Of course, then I’m trying to drive…

Granola Crusted Cashew Cream Tart (Vegan+GF)
It’s been a little while since I’ve shared a tart like this. I was going for a cheesecake type of thing and, while this doesn’t taste exactly like cheesecake I think it’s definitely delicious! I wanted to keep it simple and not bother turning on the oven since it’s been pretty warm. Anyway, I recently made this huge batch of chocolate granola. Of course, true to my habit I made it without any sort of recipe. I also made way more than I had planned. It does save well, but it was more than I would be able eat any time soon. That’s why I thought it would be fun to make…

Smooth & Creamy Strawberry Rhubarb Meringue Pie (Vegan)
Confessionโฆโฆ..making this recipe was literally my first run-in with rhubarb. Iโll be honest with you, until making this pie, rhubarb has always been on my mental list that includes things like meatloaf, chicken liver, and calamari. Things you should never mess with unless youโre on the Food Network. Basically, foods that any self-respecting food blogger knows to stay away from. Maybe thatโs just me, but you see, I didnโt grow up eating rhubarb pie made by a grandmother or anything and Iโm pretty sure the only time Iโve even tasted it was raw, straight out of a strangerโs garden. Letโs just say I had little confidence in cooking with it. The good news?…

Easy Vanilla Cream Custard Berry Tarts (Vegan)
It’s Pi Day tomorrow, so naturally there has to be pie right? Right. Glad we’re all on the same page here. So based on our local weather forecast, I’m thinking we’re done with snow around here. A month ago I might have been sad to see Winter go because I’ve missed having a white Winter season for so many years, but in case you haven’t noticed, I’m basically over Winter and totally ready for Spring. Yes, mid-March is the perfect time for Spring to truly arrive. This is such a random thing to notice unless you’re me, but when I got in the car yesterday and the seat was warmed from the sun…

Spiced Cranberry Apple Pie
How did it get this late in the year guys? I don’t know, but I’m guessing those of you celebrating a holiday tomorrow and probably even many of you that aren’t, are busy doing lots of baking now that the holiday season is in full swing. This year has been quite a whirlwind for me but I’m really enjoying that things seem to be settling down a little bit for the end of it. I don’t typically bake that many pies throughout the year but I think there’s some unspoken law that says when the holidays roll around at least one or two pies are mandatory. Oh, and also when planning the dessert…

Brownie Filled Chocolate Chip Cookie Meringue Tart
I’m saying hey from the past to some my favorite people on planet earth! That’sย you, my awesome readers! I hope you’re having a good Friday. Actually I wish it was Friday right now, but unfortunately…..it’s not. So obviously life gets crazy pretty often and as a blogger you can’t always leave things to chance or rely on the hope that somehow you’ll just have enough time to get everything done. That’s why it’s usually a good practice to be on top of things by having a little backlog of future posts as a buffer in case of emergencies. On the flip side, you can’t really write too far ahead without seeming detached and…

Simple Strawberry Peach Galette
Anyone feeling in a Springtime mood today? So do you guys have plans for gifts and/or activities for the mothers in your life or is Mother’s Day not really on your radar? I know my mom and I know how she loves anything in the fruity pastry categoryย so this was something I sort of made for her with Mother’s Day in mind. Of course, the family had no problem helping her finish it off though. I seriously think she ate about half of this thing over many days. Who doesn’t love a galette? What I love about galettes is that they look all fancy and labor intensive when in reality…
