Maple Drizzled Pistachio & Avocado Bagel Toast (Vegan)
Here’s me following a trend just for the heck of it again. On a scale of one to ten how lame do you think that is? I mean, I don’t think of myself as being follower of the norm by any means, and way more often than not I stay as far from a fad as I can. However, I’ll admit that it’s a rarity, but sometimes a the bandwagon gang knows their stuff, and I’m pretty sure this is one of those times. Avocado toast people, it’s where it’s at! I think the craze started because avo makes a way healthier alternative to just about anything that would usually make an appearance on…

Balsamic Roasted Peach, Almond, & Cilantro Pizza (Vegan)
Welcome to the month of February, where 93% of New Year’s resolutions come to die. I mean, can you honestly admit to not having fallen off the wagon all year? If so then I’m super happy for you, you’re an incredible individual with astonishing willpower. For those of us living in a more realistic world though, this is where the line between strictly healthy food and cravings for chocolate starts to get a little bit blurred. As far as pizzas are conscerned though, this one isn’t too bad. It’s got some pretty undeniably healthy toppings. It’s where the cheese and yeasty bread crust come in that we start approaching that tipping point. But…

Easy Raspberry Jalapeno Dip & Homemade Wheat Thins
Did you all have a really great weekend? I hope so, I had one of the best ever! This was my first Christmas as an aunty and also my last one as a teenager (omg, that’s kinda sad ;( ). My nephew was so cute opening his first presents ever, absolutely adorable and hilarious at the same time. Anyone have plans for New Year’s? Is it just me or is it a very anti-climatic holiday after the hype of Christmas? I’ve always thought so. We don’t have any traditions or anything special that we do as a family. Most years we just spend the weekend trying to cram in replays of our favorite…

Everybody knows, a turkey and some mistletoe……will help to make the season bright… …but this isn’t a turkey recipe. Actually, we’re going meatless today, I hope that’s cool with you guys. Wow, CHRISTMAS WEEK! Do you realize we’re now close enough to realistically start counting down in hours and minutes! There are so many things I want to get done in the next few days and, even though I know it is physically impossible to finish my list, I can still try right? So excited! So for those of you just joining in, I should mention that I’m doing recipes inspired by Christmas songs this week. Yesterday was Winter Wonderland with my little snowflake…

Loaded Sweet Potato Chili Cheese Fries (Vegan+GF)
Okay, major confession time…… I’ve never made sweet potato fries before. Don’t judge, it’s just that most of the french fry lovers in my family claim to hate sweet potatoes so I’ve always felt it would be a pointless venture. But now there will be no going back. I’ve opened the door to homemade french frying and everyone knows that they can be done. Fact: there will be more fries happening, a lot of em, and very soon. I think that if regular potato fries went up against sweet potato fries in a competition to see which tastes better chili-cheesified, the latter would win hands down every time. Sorry regular tatos, we’ll still…

Broccoli “Cheddar” Brown Rice Risotto (Vegan+GF)
I don’t think it’s possible to not be in the mood for cozy comfort food, it doesn’t matter what time of year it is. Even with it getting into Spring here, a big one-pot dish of warm and creamy happiness is always welcome, and I know it is for all of you going into Fall. My Aunt and cousin are still here and it’s been so great having them, but also extra busy. I’m getting better at busy, but I definitely still have a lot of room for improvement. We’re all having so much fun watching my aunt experience another culture. the first day she was here she put powdered sugar in her coffee…
