Cookies and Cream Cheesecake Brownie Bars (Vegan)
Yup, you read that right, Cookies and Cream Cheesecake Brownie Bars. These are sandwich cookies, cheesecake bars, and brownies all wrapped into one. This post is all about Vegan Cookies and Cream Cheesecake Brownie Bars How is your life going? Good? Not so good? Well, I hope it’s the former but I’m pretty confidant that either way it’s about to get better. I know, in the past I’ve knocked Oreos and I still haven’t changed my mind about Trader Joe’s brand being better. I just can’t get over the memory of feeling like I was eating burnt cardboard with frosting in the center. Also, they aren’t exactly health food so I figure if…

Loaded Sweet Potato Chili Cheese Fries (Vegan+GF)
Okay, major confession time…… I’ve never made sweet potato fries before. Don’t judge, it’s just that most of the french fry lovers in my family claim to hate sweet potatoes so I’ve always felt it would be a pointless venture. But now there will be no going back. I’ve opened the door to homemade french frying and everyone knows that they can be done. Fact: there will be more fries happening, a lot of em, and very soon. I think that if regular potato fries went up against sweet potato fries in a competition to see which tastes better chili-cheesified, the latter would win hands down every time. Sorry regular tatos, we’ll still…

Homemade Snickers Bars (Vegan+GF)
It’s so bad you guys, I made something so bad……. With it being October I know we’re all seeing the grocery aisles filling with extra candy and you moms are being forced to play the bad guy more than usual when you have to limit or deny the requests to buy it all every time they ask. Not only do you not want too much around for the kids to be tempted by, but admit it, when no one’s around you know you’ll remember that whole bag of fun-sized pieces and that one less won’t be detectable. Okay, so these homemade versions of a classic aren’t exactly going on anyone’s healthy food pyramid…

Broccoli “Cheddar” Brown Rice Risotto (Vegan+GF)
I don’t think it’s possible to not be in the mood for cozy comfort food, it doesn’t matter what time of year it is. Even with it getting into Spring here, a big one-pot dish of warm and creamy happiness is always welcome, and I know it is for all of you going into Fall. My Aunt and cousin are still here and it’s been so great having them, but also extra busy. I’m getting better at busy, but I definitely still have a lot of room for improvement. We’re all having so much fun watching my aunt experience another culture. the first day she was here she put powdered sugar in her coffee…

Chocolate Dipped Peanut Butter Protein Bars (Vegan+GF)
I don’t know about you guys but I can’t stand it when I find out things I’ve loved and thought were healthy are actually full of ingredients you can’t pronounce. There used to be this one brand of protein bar that I loved when I was in my preteen years and I ate them all the time. Seriously, they were so good. I’m talking creamy peanut buttery filling coated in a thick layer of chocolate. My sister and I were having a flavor flashback the other day (don’t you love those?) to our fave childhood foods and she said that I had to come up with a copycat version of these bars. I…

Double Chocolate Chunk Zucchini Bread (Vegan+GF)
I just came out of my internet procrastination daze and had one of those oh-crud-I’m supposed-to-be-doing-something moments. Yep, those are the best aren’t they? So, I know it’s only Monday, I hope you all had a killer weekend by the way, but I thought I’d start off the week with a little bit of chocolate. Okay fine, a lot of it. Mondays just need loads of chocolate sometimes, you feel me? Hey, there are vegetables in this bread too, so I think that makes it completely acceptable as breakfast. True story. Although, the honest to goodness truth is that this is an luscious cake disguised behind it’s green veggie and loaf shaped facade. You know…

Vegan Sweet Potato Ginger Carrot Soup & Cinnamon Toasties (Gluten Free)
This post is all about Vegan Sweet Potato Ginger Carrot Soup A Soup That is So Healthy It works so well, actually, that this soup is border line addictive, and you’ll probably feel guilty like you’re overindulging . The good news is that, for once, this is a recipe that you can feel good about going back in for seconds on because it’s full of pure nutrition. A Note on the Color of This Soup I just remembered that my soup was not as orange as it should have been because I used a white variety of sweet potato so all the orange is coming from the carrots in the pics. If you’re wanting…
