These bars were something I created ages ago in an attempt to compete with all chocolate focused desserts. These are for the vanilla lovers and they’re such a hit. I made them with gluten free flour just because I enjoy trying things with alternatives and seeing how well they work.
The filling takes a quick extra step to cook it until it’s thick, but it’s so worth it. Other than that, these are extremely simple to make and they really are great for parties and events.
Now, if you want to shortcut these bare you can just buy condensed coconut milk from the store.

Is Condensed Coconut Milk the Same as Coconut Milk?
No, sweetened condensed coconut milk is a non-dairy alternative to the version made with normal dairy milk. It is not the same as sweetened condensed milk. It does not contain lactose or casein like dairy milk does.
Is Sweetened Condensed Coconut Milk Healthy?
Yes, it is much healthier relative to regular sweetened condensed milk. Coconut milk is a very healthy ingredient with lots of health benefits. The sugar in sweetened condensed coconut milk is not ideal but can definitely be considered healthy as part of a balanced diet.
Can I Use Sweetened Condensed Milk Instead of Sweetened Condensed Coconut Milk?
Yes, you can replace sweetened condensed coconut milk with regular sweetened condensed milk in most recipes if you consume dairy.
What Can I Use Instead of Condensed Coconut Milk?
If you want to keep this recipe vegan but do not want to use sweetened condensed coconut milk or can’t find it you can use a few things. Vegan caramel is a good substitution in many recipes. You can also use coconut cream and a bit of sugar in place sweetened condensed coconut milk.
What is the Difference Between a Brookie and a Blondie?
A brookie and a blondie are distinctly different things. A blondie is a light colored cookie bar made usually with a mixture of white and brown sugar with vanilla flavor. A brookie is a marbled cookie bar made of half brownies and half cookie dough (usually chocolate chip cookie dough).
What Can I Do with Extra Sweetened Condensed Coconut Milk?
If you’ve opened a can of sweetened condensed coconut milk and haven’t used it all in a recipe you may be wondering what you can do with the excess. Some possible ideas for using it are:
- Pouring over ice cream,
- Using it in tea or coffee (matcha would be delicious)
- Making it into caramel if you have a lot extra
- Adding it to a glaze for baked goods
- Eating it with a spoon (it’s that good)
Does Sweetened Condensed Coconut Milk Go Bad?
Yes, sweetened condensed coconut milk can go bad and even risk making someone sick. It does last much longer than many other ingredients before going bad but it can grow mold or have a bad smell. If you have left it out unrefrigerated or in a hot environment it will likely go bad much faster.
Do not use a can of sweetened condensed coconut milk if the can is damaged, cracked, or smashed as this can increase the risk of it being spoiled.
How Long Does Sweetened Condensed Coconut Milk Last?
Sweetened condensed coconut milk has a high sugar content and a low water content and can last mucc longer than regular coconut milk. A sealed can of sweetened condensed coconut milk can last many years in the can. For highest quality it is probably best to use it within 1 to 2 years if it’s remained sealed in the can.
Once opened sweetened condensed milk can last up to 2 weeks if kept in a sealed container and refrigerated. It is not recommended to use after more than a day of being left at room temperature.

Vegan Almond & Condensed Coconut Milk Blondies (GF)
Ingredients
Condensed Coconut Milk:
- 1 can full-fat coconut milk
- 3/4 cup cane sugar
- 1/4 teaspoon sea salt
- 1 teaspoon vanilla extract
- 1 tablespoon arrowroot starch or cornstarch
Blondies:
- 1/3 cup coconut oil
- 1 cup cane sugar
- 1/2 cup coconut cream*
- 2 teaspoons baking powder
- 1/2 teaspoon sea salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 cups 1 to 1 gluten free flour blend or all purpose flour if you're not gluten free
- 1/3 cup vegan white chocolate chips or chunks
- 1/2 cup walnuts chopped
Icing:
- 1 tablespoon coconut water or water
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/8 teaspoon sea salt
Instructions
Condensed Coconut Milk:

Combine coconut milk, sugar, and salt in a small saucepan and place over medium low heat. Bring to a boil while gently stirring and cook, about 10 to 15 minutes, until it starts to thicken enough to coat the back of a spoon. Remove from heat and stir the cornstarch with about a tablespoon of water to make a smooth paste. Now quickly whisk in the cornstarch mixture and return pan to a boil for about a minute until thickened. Remove from heat and stir in vanilla then set aside.
Blondies:

Pre-heat oven to 350 degrees F (180 C) and lightly grease a 8×8 inch baking pan. Pour the coconut oil into the bowl of stand mixer and add sugar and coconut cream. Beat together until combined, then add baking powder, salt, vanilla, and almond; mix until smooth. Add flour one cup at a time and beat after each addition. Stir in white chocolate and nuts then divide dough in half.

Press one half into prepared pan in an even layer and bake on the top rack of oven for 8 to 10 minutes. Remove from over and pour your condensed coconut milk on top. Crumble the remaining dough over condensed milk and place pan back in oven but on the middle shelf. Bake for 15 to 20 minutes or until the top is starting to turn golden brown on edges. Remove from oven and cool for at least 1 hour before cutting into bars.
Icing:

Whisk together ingredients for icing until smooth then drizzle over cooled bars using a pastry bag or just a spoon. Allow icing to dry before serving

Recipe Notes
The coconut cream is a different product than coconut milk. You can buy it on it’s own at some stores but if it isn’t available you can use a can of full fat coconut milk (you’ll probably need 2 to get 1/2 cup). Just place it in the fridge and allow it to chill so that the cream separates from the rest. Use a spoon to gently scrape the cream layer and then save the rest of the can for another use. It’s great in smoothies.

For someone who loves to bake, I feel like I’ve committed a baking sin by not having made anything with browned butter. I always read about how great browned butter it is with changing textures and enhancing flavor, but still have yet to try it. Thanks for the recipe, I absolutely LOVE blondies and coconut!! I think so, yes. I wouldn’t use only almond flour but maybe about half would work nicely.

I’m confused about all of the reviews talking about browned butter, yet I don’t see that anywhere in the recipe?

Good question, I can see how that would be confusing. I originally used browned butter in this recipe until I updated it. Those comments are years old.
