Harvest Time Apple Streusel Swirl Bread (Vegan)
Are you in the mood for some warm, yeasty bread, sweet apples, cinnamon spice, and plenty of crumbly streusel!
I don’t think there will ever be any question whether or not this is one of the best flavor combinations known to man. Ah, it’s so good! By now you’re probably starting to catch on to the fact that I like to recreate my family’s favorite foods. Things that we don’t have access to in Chile. I enjoy the challenge.
This is one of my recent attempts to copy a classic. One of my sisters used to have this slight obsession with apple bread and she’s been missing it a lot since moving here so I tried making my own version for her.
So, um, question; what category do you think this fits into? I know most of you probably wouldn’t consider this a reasonable option as breakfast but there’s like fruit and stuff. That totally qualifies it for breakfast in my opinion. Although it’s definitely delicious enough for dessert so I don’t know. It’s like bressert. Dreakfast?
I haven’t had commercially made apple bread in like forever so I’m not sure how this compares but according to the fam this is way better. I’ve actually made it 3 times already and they still want more. They usually get sick of something after the second time so that’s saying a lot.
It doesn’t matter where, or when, or how you want to eat this but you just have to try it. It’s so worth it!
Harvest Time Apple Streusel Swirl Bread (Vegan)
Warm your home this season with all the cozy smells of apples, spices, and fresh baked bread all wrapped up in this delicious loaf of goodness!
Ingredients
Bread:
- 1 cup lukewarm plant-based milk
- 1 tablespoon active dry yeast
- 1/4 cup white sugar
- 1/2 teaspoons salt
- 2 tablespoons coconut oil melted
- 2 1/4 flour
Streusel:
- 1/2 cup 1 stick vegan "butter"
- 1/2 cup brown sugar
- 1/4 sugar
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 1/4 cups flour
Apple Filling:
- 2 small apples peeled, cored, and diced
- 1/4 cup brown sugar
- 1 teaspoon cinnamon plus more to taste
- 2 tablespoons coconut oil
Instructions

Dissolve yeast in milk and allow to sit for about 5 minutes until bubbly. Pour into a large mixing bowl and beat in sugar. Stir in melted coconut oil, salt, then flour until your dough comes together.

Turn out onto lightly floured surface and knead for about 5 minutes. Place in a greased bowl, cover with damp towel, and place in warm place to rise until doubled in size.

While dough is rising make streusel. Cream "butter" and sugars until smooth. Add remaining ingredients and mix until well combined. Set aside.

Now heat a medium skillet over medium heat and add ingredients for apple filling. Saute until apples are very tender, about 6 minutes. Remove from heat and set aside.

When dough is ready, grease a regular size loaf pan with oil. Roll out dough on lightly floured surface into a rectangle roughly 8 x14 inches. Sprinkle apple mixture over dough, followed by half of the streusel, then a dusting of cinnamon to taste. Roll (short end) from one side to the other and place, crease side down in loaf pan. Crumble remaining streusel over bread and place in a warm place to rise while oven preheats. Preheat oven to 350 degrees F (180 C)

Bake for 45 - 55 minutes until golden. Cool for at least 15 minutes before cutting.
